Apple Pumpkin Muffins

these are delicious! I had some old apples to use up so I did a search for apple muffins. I stuck to the recipe but used whole wheat flour, applesauce instead of the oil, and 1 cup of splenda sugar, 1 cup of regular brown sugar. I did not add the streusel because I am watching calories and fat. I made 21 small muffins (which took 20 minutes to bake) and 1 mini loaf of bread (which took about 35) delish!

Black Bean and Salsa Soup

This recipe was super easy and very tasty. I did make some adjustments though. I used dried beans instead of canned. I blended 2 cups in the blender and left one cup unblended. I sauteed half a red onion, 1 jalapeno, and 4 cloves of minced garlic and added that to blender along with the salsa and 2 tablespoons of cumin. i also added 1/4 of a teaspoon of chili powder. I cooked it for about 20 minutes letting it get thicker. I put 1/4 cup of brown rice in the bottom of the bowl, piled on the black bean soup and topped it off with cheddar cheese, a dollop of sour cream a tablespoon of corn, a tablespoon cilantro and a tablespoon of green onion. Lets not forget the avocado! Delish!

Jalapeno Popper Spread

This was so delicious! I used 6 fresh diced jalapenos and a 8oz can of green chilis. It was so tasty and satisfying! I also put bread crumbs on the top with some chedder cheese. I personally dont think it needed the extra cheese because I couldn't really taste it. I brought some of the leftovers to lunch today and my coworkers shared a small piece of heaven with me! word to the wise, when chopping jalapenos where gloves! my hands were on fire all night and today :(

Bacon Quiche Tarts

I made these for a potluck and can I tell you, they were the hit! My mouth is watering just writing about them. I made a few changes to the recipe. I used 3 12 canned biscuits, light cream cheese and added an extra egg( total of 3 eggs). I also used colby jack cheese instead of swiss. I made 3 varieties. I made a bacon and cheese, a spicy sausage green chili and cheese, and a green chili and cheese for my vegetarian boyfriend. All three were delish! This recipe yield about 29 mini quiches and 3 no biscuit quiches because I had extra batter. I used a slightly smaller cupcake tin than the normal ones. The only thing I would do different is turn the pans after 10 minutes because the inner side were slightly darker than the rest (even 2 burned! :( ). Other than, I am making them for the next potluck and make a spinach mushroom one, too. Oh one more thing, I made everything and put it together the night before, covered it with tin foil and put in fridge and baked it for 20 minutes the next morning and it everything came out great! UPDATE 5/27- made a vegetarian version with fake bacon and portabello mushrooms in one and fake sausage and green chiles in the other. Delicious! Tasted just like real meat! last weekend and put the extras in the freezer and fridge. They still taste delicious in the microwave for 30-45 seconds! Tasty Breakfast to go!

Garbanzo Tomato Pasta Soup

i used this as a base but changed added many more things. It actually kind of turned into a minestrone. i added zucchini, portabello mushrooms,and a few shakes of paprika, rosemary, cumin, and oregano. I used fresh basil and cooked the macaroni with the garbanzo beans with all the spices and vegetables. it was really good after i made some adjustments. I also topped it off with some colby jack shredded cheese.

Salmon Fillets with Creamy Dill

This was delicious and simply to prepare! I cut the sauce in half and I still had leftover creamy dill sauce! The only thing I did different than the recipe was I used 3/4 of a cup of smart beat (fake mayonnaise) and 1/4 a cup of real mayonnaise and I added extra dill because it just felt right :) Delicious and will definitely make again.

Beaker's Vegetable Barley Soup

This was really easy to make. The only reason I gave it four stars is because it tasted more tomatoey than I expected. My guests loved it and it was incredibly filling. I added cumin and red pepper.

Sun-Dried Tomato Hummus

this hummus is delicious! I added extra sun dried tomatoes, oil from the sun dried tomato bottle and extra garbanzo bean juice and water. it was so delicious, my friend tried it, insisted I printed the recipe and went directly home to make it.

Stuffed Bell Peppers

Made this recipe Saturday night and made the leftovers today. Overall this recipe is very delicious and filing. The things I did different (based on the suggestions of other reviewers) I added fresh chopped cilantro, 1/4 teaspoon of cumin, cooked brown rice and colby jack cheese to the mixture. I also used a red bell pepper and a pasilla pepper instead of the green bell pepper. I wouldve used a poblano but couldnt find one at my grocery store. The pasilla was spicier and my boyfriend loved that one.

Mexican Corn

made this last night. It was really simple and had a great taste. Didnt have canned green chilis so I just added a chopped tomato. I only used 4 jalapenos (ours were really hot) and 1 can of corn (i cook for 2) and next time I will use less cream cheese because it didn't need as much as the recipe calls for :) Overall very flavorful and I will be making it again.

Butter Bean Burgers

these were really delicious. I used some of the comments to enhance this recipe. I added fresh crushed garlic and garlic salt. I also used 1/4 cup of italian bread crumbs and combined it with the mixture then coated more on the outside. (i like things crispy). I also made it the night before so the patties would stay together (i work a lot so this made it easy to cook the next day) We didnt eat ours on buns but i put it on two slices of grilled bread with havarti cheese. Delicious!

Insanely Easy Vegetarian Chili

This chili was very good. I stuck to the main parts of the recipe but added a few extra things. I added garbanzo beans(without the juice), black beans(with the juice), pasilla peppers, and yellow squash. Everything was cooked perfect. My vegetarian boyfriend loved it too and commented on how yummy it was with all the veggies! I have lots leftovers (I only cook for 2) so next time I might cut the recipe in half. I also added cheese, sour cream and fresh avocado on top.

Double Tomato Bruschetta

This bruschetta recipe is my favorite (and all of my friends). I add extra basil and extra garlic. Quick tip, if you buy a chop wizard, the tomatoes will be cut in seconds rather than 10 minutes. I can whip up this recipe in less than 10 minutes and I know it by heart!
