Coconut Crust

I must have done something wrong...there was a lot of coconut, and so the top of the crust got toasted, but the bottom stayed untoasted--causing it to fall apart on me. And it was simply just way too rich. Like I said, it could be very possible that I did something wrong, but it's two ingredients!!

Banana Mallow Pie

Loved it! You can jazz this pie up as you wish, or prepare as directed--so many possibilities! So easy to make, too--and I love that there was basically one bowl to clean. I used French Vanilla pudding, and it was delicious. Expect the marshmallows to get very soft--almost like the texture they get when they are in ambrosia--they lose their firmness but give the pie a nice firm consistency. Next time I think I'm going to try the coconut crust that another reviewer put on here. Thanks for the recipe!

Authentic German Potato Salad

I absolutely love this recipe...Americans can really benefit from steering away from the mayonnaise/mustard based potato salad by trying this. My mother's mother was from Germany, so my mother's cooking incorporated a lot of German influence. I remember her making this type of potato salad, but even hers wasn't this good. Thanks for sharing the recipe!!

Oatmeal Peanut Butter Cookies

At first I wasn't really impressed--as I was baking, I tested the batter (as I often do) and it was bland and tasted odd, like something was missing. I went though the ingredients list again, and I hadn't forgotten anything (I'm a total novice and have done that several times, only to realize it when my dish is in the oven). I baked as directed, let the cookies cool, and tried them again--all in all, very good. These aren't totally wowwy wow, like something you'd bring to a pot luck, but they are an excellent every day cookie--not too sweet, very basic, and delicious.

Fresh Southern Peach Cobbler

Wonderful and pretty simple. I would do one thing differently--I would make the spoon-sized dollops of cobbler that you drop on top of the peaches smaller than a spoon size--I liked the cobbler more crumbly and less doughy, and when the sizes were bigger, I noticed that they were more cake-or bread-like, and not cobbler-like. Very easy problem to fix, though!
