Best of the Best Blueberry Muffins

i was skeptical just because of the mixing technique... usually the less you mix the better the texture... and alternating the buttermilk and flour to the butter mixture might make it tough, but they turned out tender as could be. as i have a terrible time leaving any recipe alone, i made some changes. i used 3/4 cup of zylitol instead of sugar (look this product up if you never heard of it- its great!!!) and used sifted whole wheat flour - reducing the total amount by 1/4 cup. and also i used unsweetened soymilk mixed w/ a t. of vinegar for the buttermilk. and i forgot to crush some of the berries. and i did not sprinkle sugar on top. but even w/ all the alterations- the muffins are fantastic!!! i just finished my 3rd one. im pregnant and had such a craving for blueberry muffins, and these turned out tender, and moist. thanks for sharing!

Classic Minestrone

Ah, yes... A blustery fall evening with friends was warmed up with this soup recipe served with homemade bread. As I have a hard time leaving recipes the way they are, I added shredded cabbage, omitted the zukes, sprinkled a generous amount of fresh parsley in addition to the thyme, and I used canned tomatoes in lack of fresh ones. The result was just as hearty as I hoped it would be. Colorful, rich and made plenty; I recommend this to anyone as a number one comfort food.

Almond Cookies I

Light and crisp with a delicate crunch, the center is slightly chewy and the almond flavoring gives a delightful aroma when baked. I gave them an egg white wash and they glistened! Easy and quick to make, they will become a regular. I used half butter and half crisco - they turned out simply delicious!

Sophie's Zucchini Bread

Moist and flavorful, this zucchini bread is top notch! I substituted sunflower seeds for the lack of walnuts, and I wouldn't recommend it.. but it is still mighty tasty~ I like that you use so much shredded zukes, for I have plenty to use up. I like it best with cream cheese mixed with cinnamon and a little apple butter.

I have a hard time leaving recipe alone..... although I am sure that this recipe is good as it was written, I made some changes and additions - I omitted the wheat bran and oat bran, added unsweetened puffed wheat, lots of mixed dried fruit, extra walnuts and omitted the brown sugar.... I just had a bowl and it was surely satisfying after running!

Sugar Free Rugelach

This recipe I altered by using whole wheat flour instead of the white and I believe it added a delightful nutty crunch. Though , it was harder to see if they were golden brown! I regret not putting on more apricot spread, for they were a bit dry, but I can easily adjust that. I would also increase the filling amount next time, I still have a quarter of dough in my fridge because I ran out! But I will be making this again soon! Great with coffee and tea!

Makhani Chicken (Indian Butter Chicken)

this was sooo yummy. the fragrance was thick, the flavors rich and the taste extremely delicious. went well at my indian picnic feast, which i served it with basmati rice, naan, samosas, raita, iced chai tea, and cashews.
