Best of the Best Blueberry Muffins
i was skeptical just because of the mixing technique... usually the less you mix the better the texture... and alternating the buttermilk and flour to the butter mixture might make it tough, but they turned out tender as could be. as i have a terrible time leaving any recipe alone, i made some changes. i used 3/4 cup of zylitol instead of sugar (look this product up if you never heard of it- its great!!!) and used sifted whole wheat flour - reducing the total amount by 1/4 cup. and also i used unsweetened soymilk mixed w/ a t. of vinegar for the buttermilk. and i forgot to crush some of the berries. and i did not sprinkle sugar on top. but even w/ all the alterations- the muffins are fantastic!!! i just finished my 3rd one. im pregnant and had such a craving for blueberry muffins, and these turned out tender, and moist. thanks for sharing!

Classic Minestrone
Ah, yes... A blustery fall evening with friends was warmed up with this soup recipe served with homemade bread. As I have a hard time leaving recipes the way they are, I added shredded cabbage, omitted the zukes, sprinkled a generous amount of fresh parsley in addition to the thyme, and I used canned tomatoes in lack of fresh ones. The result was just as hearty as I hoped it would be. Colorful, rich and made plenty; I recommend this to anyone as a number one comfort food.
