Creamiest Rice Pudding
This is classic. I use just a little bit less sugar (personal preference)and a cinnamon stick. I heat the milk sugar before adding the rice. Once the rice is in I bring it to a simmer (it was about 30 minutes to get to this point) then cook it with the lid partly off until it was the desired consistency. This takes about another 60 minutes. Keep stirring so it doesn't stick and don't rush it. I let the egg and additional milk come to room temperature and I also temper the eggs before putting it into the rice mixture.

I cannot rave about this recipe enough. Here are a few tips: Don't rush it, each step takes awhile, temper the eggs slowly, keep stirring once you return it to the pot, and don't skip straining it. I wanted more gelato so I increased the milk to 3 cups and the cream to 1 1/2 cups, but left the sugar the same. I also used two whole eggs (easier than separating eggs) instead of the 4 yolks and it fit perfectly in my 4 1/2 cup gelato maker. Use the freshest ingredients you can find, I actually had fresh milk! After chilling the custard you can add your mix-ins. I added about 6 oz of nutella and 2 tbls of unsweetened cocoa and it was AMAZING!

Pineapple Angel Food Cake I
Made the cake exactly as directed and baked for 30 minutes and it was perfect. I Did not invert the pan when cooling the cake. I only mixed the cake mix and pineapple enough to blend it completely maybe 1 minute. The center did not rise and it did not fall. We topped ours with fresh whipped cream and everyone was happy!
