Pork Tenderloin with Herb Sauce

This was fantastic! I don't have a grill so I thickly sliced the tenderloin and cooked it right in the sauce in my cast iron skillet covered for about 20 minutes. Turned them once. I think the red wine vinegar was the key. Delish!

Spinach and Leek White Bean Soup

Refreshing light flavor and filling. I make soups as a way to have dinner then lunch for the rest of the week and this fit the bill. I held the spinach and added it before I reheated each serving. It's also good with a dollop of sour cream.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Very tasty and satisfying. I substituted white beens for the garbanzos and added fresh garlic. It reheats well for lunches, too. I am a new subscriber to a local/organic produce box and had never cooked chard before. This recipe is being saved to my recipe box.
