Grilled Shrimp Tacos

Spanish Rice II

Super yummy! I've never tried making my own spanish rice before - but this was simple and delicious. I actually simplified this recipe even more by using a rice cooker. I omitted the fresh onion and instead used 1 TBSP onion flakes. I also substituted the green bell pepper, can diced tomatoes, and green chiles for 1 (7 oz) can of casera. Last, I substituted the 2 cups water for 2 cups chicken stock.

So Delicious! I made mine Gluten Free by using 1 1/2 cups Pamela's Pancake Mix, and 1 1/4 cups GF all-purpose flour. Turned out so awesome!

Chicken Tortilla Soup V

A couple changes: I boiled the chicken 15 min. with 1 clove garlic and salt. Sauteed the onion about 3 min., added the cooked chicken (now shredded) with remaining ingredients, and boiled for 15 min. Additionally, I made stuffed bell peppers the night before and had about 2.5 cups extra stuffing (see my stuff bell peppers recipe), and added that to the soup the remaining 8 minutes. It made the soup much more hearty!

Amy's Cilantro Cream Sauce

Pretty good.. I was hoping it would taste similar to the cilantro ranch dressing served at Cafe Rio in Utah - but it didn't. It was still good though, I used it to make chicken tacos and a black bean salad. I simply chopped the chicken and lettuce I wanted to use, put the dressing on the food in a container with a lid, and shook. Then placed the chicken, black beans, and salad (now covered in dressing) into a taco shell, added some diced tomatoes and some shredded cheese.

Pizza Sauce and Dough

My review is for the pizza sauce only; I used a gluten-free Udi's pre-made pizza crust. I had to make minor adjustments to the sauce recipe due to lack of available ingredients, but it still turned out fantastic. Although, if I had the fresh ingredients on-hand, they would have been my preference. I used about 1/4 tsp garlic powder, and 1/4 tsp minced garlic, no fresh garlic. My can of tomatoes was only a 14.5 oz can, and then I chopped 1 1/2 large fresh tomatoes with juice. My tomato paste can was an 8 oz., I used only one. I used 1/2 tsp basil seasoning, instead of fresh basil; as well as 1/2 tsp oregano seasoning, instead of fresh oregano. Additionally, I used 1 TBSP of pizza seasoning blend. This made quite a bit of sauce. I have enough left over sauce to make an additional pizza, plus a single serving size of sauce to eat with pasta. *Toppings: Orange bell pepper slices, thin sliced fresh tomato, pepperoni, fresh grated mozzarella, packaged grated cheddar, parmesan cheese, and fresh chopped parsley.

Hearty Turkey Stew with Vegetables

Loved it. I used chicken instead of turkey. I was expecting a salty flavor similar to other stews that I have made, and this one had more of a sweet flavor - which I LOVED! Tasted even better the second day after the vegetables absorbed the seasoning.

Fiery Fish Tacos with Crunchy Corn Salsa

Delicious! I made these last minute for a little party and everyone loved them! I didn't have sour cream handy, but we exchanged with Krafts 'Mayo w/Olive Oil' and it was AMAZING!
