Sauteed Apples

Reviewed: Jan. 5, 2013
It's always the simple recipes that are the standouts and this is no exception. These sauteed apples were fantastic hot over ice cream and somehow amazing the next day, cold, out of the fridge with yogurt. I highly recommend this!

Amazing Italian Lemon Butter Chicken

Reviewed: Sep. 5, 2012
Oh wow, amazing is right! It took about 45 minutes total and next time I'll remember to start the pasta later to improve timing. Don't feel compelled to use all the sauce, because though it's delicious, it's RICH - like, artery clogging rich. Perfect meal on a cool evening.

Creamy Cajun Deviled Eggs

Reviewed: Aug. 17, 2012
I LOVE deviled eggs and have started making them regularly so it was time to add a kick and this recipe was it. Follow Martha Stewart's method for perfect hard-boiled eggs where you cover eggs with cool water by 1 inch in a saucepan and slowly bring water to a boil over medium heat. When the water has reached a boil, cover and remove from heat. Let sit 12 minutes. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can be peeled immediately. Follow this recipe once and then use it as a launching board to make up your own deviled egg combinations.

Wonderfully moist thanks to the addition of sour cream. This cake turned out light, fluffy, and perfectly indulgent. This is THE chocolate cake recipe.

Sweet and Spicy Sweet Potatoes

Reviewed: Dec. 11, 2011
LOVED THESE POTATOES! Delicious and perfect. Will definitely make again! If you like condiments (like I do) add a dollop of sour cream to accompany the hot potatoes fresh from the oven.

Crispy Fried Chicken

Reviewed: Dec. 11, 2011
In my first fried chicken experience, I was glad to have such a simple recipe. I did have a little trouble gauging just when the chicken was ready to remove from oil and accidentally overcooked my first batch. This is a staple recipe with specific directions that will come in handy the next time fried chicken is needed.

Rice and Lentil Casserole

Reviewed: Dec. 11, 2011
Simple ingredients and with spicy sausage, it packed a super kick on a cold night. I must have done something wrong though as my rice & lentils were mushy :/ The flavors were so good though that it was eaten anyway but I will have to make another go around on this one.

Apple Streusel Squares

Reviewed: Dec. 11, 2011
I made this in 8" round pans and it turned out great. It was a hit at work and was pretty simple to put together (once I got all those apples peeled!) I also made this recipe with a tad more dry ingredients as a birthday cake for a friend which turned out perfect in a cheesecake tin

Melt In Your Mouth Pumpkin Bread

Reviewed: Nov. 9, 2011
Moist and perfect! Fantastic as cupcakes, just reduce the bake time. If you can't find coconut cream instant pudding mix, vanilla is a solid substitute. Best served warm, right out of the oven with a pat of butter on top.

Chocolate Orange Marble Cake

Reviewed: May 12, 2011
This cake is moist and quite flavorful and was the perfect complement to Rwandan coffee. Since this is the first time I've ever made a cake from scratch, I will likely use the batter base (before adding the chocolate or orange zest) to experiment with other flavors. I enjoyed this and hope you do too.

Garlic Asparagus with Lime

Reviewed: May 7, 2011
The addition of lime to this simple asparagus recipe was perfect. Will definitely make again. I've changed my rating from 4 stars to five stars now that I've made this recipe a dozen times. I keep going back to the fresh kick of citrus! This has become a staple recipe in my home.

Baked Pork Chops I

Simple & quick & delicious - watch the oven time though so you don't overcook your chops. Meat thermometers are perfect to help assess cook time if you have one.

Slow-Cooker Posole

Reviewed: Jan. 12, 2011
We loved this spicy posole; next time I'll add more hominy and add cabbage & lime. This was a really great posole recipe that made good use of my slow cooker.

Apple Turnovers

Reviewed: Dec. 18, 2010
I followed the recipe exactly and they turned out beautifully! The end result tasted much more complex than the simple ingredients and steps to the recipe. The filling yields more than the pastry sheets could hold and next time around I might reduce the filling a bit and only use three apples to avoid the waste.
