No Bake Pumpkin Pie I

Loved this pie and so did everyone else. It really was pretty simple to make. Doubt that I will be baking a traditional pie again. Some suggestions: Use a whisk to blend the eggs well and then combine with other ingredients before cooking on the stove top. Continue to use the whisk while cooking. I found the mixture tended to get thinner at first and slowly thickened. I cooked mine on med-low heat until the consistency of thick gravy...and on my stove that took about 12 min. CHANGES: took another reviewer's idea and used 2 tsp of Pumpkin Pie Spice instead of Ginger, Cinnamon, and Nutmeg...too lazy and busy on Thanksgiving Day. Thanks!

Susan's Butter Cake

Hubby didn't care for the cake, but I loved it. He thought there was too much vanilla, and I have to agree. I followed the recipe as written; however, only baked for 60 min. Easy to make. I can see many variations of this recipe being equally tasty. Changing extracts, spices, or using rum. Thanks!...UPDATE: Held up well and stayed moist for the 3 days it took to polish it off.

Donut Muffins

Very tasty. I liked them more than hubby did. Made 24 in a Wilton Mini Muffin pan and I followed the recipe as written. Will try this in my mini-donut machine next time. Thanks!

Mexican-Style Goulash

Husband and I liked it. CHANGES: Followed recipe as written but did spice it up some with additional dry seasonings as suggested by others. Recipe is very user friendly and can be adjusted to suit individual tastes. Thanks!

Cranberry Orange Cookies

Very delicate texture and they just melt in your mouth. Has a great flavor with a lot of different things that come at you. I found the kids didn't care for them at all, but the adults liked them pretty well. I can see them being ideal for work or church gatherings. CHANGES: Pecans instead of walnuts. Next time I will chill the dough for a while due to some thinning during baking. I always like to give the original recipe a chance before I adjust.

Beth's Spicy Oatmeal Raisin Cookies

I've been making these for the last 3 months and have yet to find anyone who doesn't like them. The funny thing is that the cookie is much better the next day. They are very addictive. CHANGES: I do not use butter flavored shortening, but regular shortening substituted nicely. I love pecans and used 2/3 cup chopped.
