Growing up it was all about meat and potatoes and 1 vegetable. beef and pork mostly, and endless mashed or boiled potatoes.
Now i'm free :) to explore. I love indian, thai, greek, lebanese foods.
I've done the restaurant thing, now i want to try to do it at home.
Trying to keep it healthy, learn to like legumes+vege options. Cooking is not my strength - i like simple things that are easy to make. I LOVE to bake but keep it in check to avoid "muffin top" lol
Slowly but surely...

Spiced Chicken Loaf
I had bought extra lean ground chicken and needed to find something to do with it. I liked this recipe alot since it was easy to make then in the oven in goes. I put breadcrumbs too, a little more onion (love onion!) a little bit of curry powder, and a little bit of hot sauce instead of bbq. nice and moist. didn't do any glazings though as others suggested... may try dijon next time around - i'm definately putting this one in my recipe box!
