Spiced Pecans

Amazing! I love how there is no butter in this recipe. As suggested by others, I left out the cloves, cut down on nutmeg (personal preference) and beat the egg whites til only soft peaks which I think helped with coating the nuts. I used raw cane sugar (I ground it so it was finer like white sugar) and cut it down to just over half the amount and it was still sweet enough. Baked at 300, stirred every 10 minutes and it needed about 35 minutes total in my oven.

Onion Roasted Sweet Potatoes

I just made these tonight and they're delish! I cut my potatoes in to 1" cubes and it only took about 35 minutes at 400. I used 1 package of soup mix because that's all I had and only used about 1/4 cup of olive oil. Next time I'm going to try this with a home made soup mix.

Easy Chinese Corn Soup

Great basic corn and egg swirl soup. I like it with sliced mushrooms added, or with a few drops of sesame oil and green onions.

Cinnamon-Sugar Popcorn

Excellent! For a healthier version, I replaced half the butter with olive oil (melt butter, mix in sugar, stir in oil, then rest of ingredients. stir lots because the oil likes to separate but it eventually mixes in) and used 1/2 cup brown sugar instead of 2/3 cup white sugar.

Chicken Tortilla Soup II

This recipe turned out soo delish that I had to join to post a review. Changes I made: less oil in the beginning, a squeeze of the rooster brand hot sauce instead of the chili power and fresh tomatoes instead of canned. Following other members reviews, I also added a big can of black beans, then topped the finished soup with a bit of sourcream, cilantro, shredded cheddar and avocado. The avocado is my persoanl fave addition to this soup! Next time I'm going to try to add more veggies to this soup to make it even better for you like bits of cauliflower (although not typically mexican) and different/more beans. My boyfriend said this is the best thing I've made to date and that he could actually eat this every week.
