Irish Cream Chocolate Cheesecake

This is a wonderfully rich, well-balanced cheesecake. I made exactly as written and thought it was perfect. My "chocolate cookie crumbs" were oreos. No adjustments needed. I did use the water bath and had no cracks. Topped with homemade whipped cream. Not too heavy, not too fluffy Juuuuust right!

Chocolate Mint Cookies I

I just love these! They are far better than Thin Mints IMHO. Sometimes I can't find mint wafers at the store so instead I'll use mint chips and add a couple mint and a couple chocolate chips. When they melt I swirl them around and it makes a pretty marbly pattern. Fabulous recipe.

Chicken Mole

This is fabulous - very rich and savory, full of wonderful fragrance and flavor. The first time I made it it turned out a bit too sweet for my taste, so now I leave out the brown sugar entirely and go a little heavier on the cayenne. That makes it perfect for me.

Spanish Rice Original

This is my go-to spanish rice recipe. It is perfect as written. I do not add the optional corn or olives - doesn't need it! Excellent leftover/reheated too.

Gingerbread I

This is the perfect classic gingerbread recipe. I too doubled the spice based on personal preference. It makes a smooth, rich, mollasses-y batter (which I ate way too much of raw!) and an even more delicious cake. I served warm with homemade whipped cream. Christmas on a plate! Side note: this is probably much easier to make if you have a kitchen aid. It wouldn't be impossible with a handmixer, just labor intensive.

Gingered Molasses Cookies

These are amazing! I stuck pretty close to the original recipe. I did add 1/2 tsp of fresh ginger in addition to all the grated spices (just because I'm a ginger fanatic). The cookies were chewy and moist - so full of flavor. The orange zest really makes the flavor come alive!

Cookie Jar Sugar Cookies

Much better than your average sugar cookies! I realized at the last minute that I didn't have sour cream so I replaced it with cream cheese. It gave it a lovely zing. I found that if you divide the dough in half and flatten it before refrigerating, that you only need to chill it for about an hour. No problem with crumbling as others have stated. Delicious!!!
