this was good enough for a dinner party! You definitely have to triple or quadruple the sauce just for 2 people tho. Added some basil, otherwise by the recipe,except for the tripling part!

Chicken Enchiladas V

Very good! I added 1/4t of cumin to sauce, along with garlic salt and pepper to taste. Made with fat-free soup,low-fat sour cream, and it was still great.

Salsa Chicken Rice Casserole

This was pretty good, and easy to make with stuff I had in the pantry. I did make a few changes: Added one can of drained golden hominy to the rice to give this more of a tex-mex flair, Only used one can of soup (celery) because I halved the recipe, substituted a can of Rotel tomatos for the salsa, green onions for white, and added 1/2c. chopped red bell pepper. I also added about 1/2 cup of sour cream to the soup mixture. Small changes, but made for a very tasty casserole!

Easy Caramelized Onion Pork Chops

Unbelievably good for so simple a recipe! I cut a pork loin into chops, removed after browning, as suggested by others and carmelized the onions with a little brown sugar. Returned the chops to pan, added beef broth, and covered. Great! served with mashed potatoes!

Chicken and Sausage with Bowties

Have made this twice with great results both times. Used dried basil (1tsp.)instead of fresh. Great flavor, yet actually rather light. Don't expect a heavy tomato sauce pasta dish.

Mandarin Orange, Gorgonzola and Almond Delight

Duh! I have to admit-this is my first experience with gorgonzola cheese. Mine had the consistency of cream cheese, not crumbly like bleu-so, I had a little trouble figuring out how to place it on salad.

Great for a rainy night! I used homemade broth, added about 1/2 cup of chopped onion, grated a small carrot. Wonderful supper with hearty rolls or cornbread!
