About this Cook
I have been happily married for 8+ years to my wonderful husband Wes, and we have 4 awesome kids ages 7, 5, and 3 yr old twins. I teach preschool sunday school and am attending college to persue a degree in Elementary education. I am ALWAYS busy but love to make time to cook amazing dinners and bake goodies with my kids.
My favorite things to cook
I am an Italian girl who LOVES to cook Italian food!!! My homemade pastas and sauces are pretty tasty and fun to make. I absolutely love to bake with my kids as soon as fall comes to Michigan! We bake lots of cookies for the holidays. I absolutely love Chinese food and Indian food, so I make sure to make them at least once a month each (curry chicken and veggies over rice is a staple dinner in our home). I love to try new recipes and I love to cook just about anything. We'll try anything once! :)
My favorite family cooking traditions
My favorite cooking tradition has to be our Italian Christmas dinner. We pqdk up the kids and head to my mom's house where my mother and I make homemade italian meatball chicken soup with homemade noodles. We make homemade pasta and serve it with Italian sausage, mini meatloafs and marinara. And of course, there's plenty of parmesian to go around! We make lots of desserts, and set a very formal dinner table. We do this every Christmas Eve. After dinner each of the kids open two christmas presents; a new pair of jammies and one they pick out of the pile. It's a tradition that I hope will continue for generations!
My cooking triumphs
My best dishes would probably have to be my: 1. Italian stuffed shells 2. Succulent whole turkeys 3. moist baked chicken 4. chicken alfredo soup 5. chicken stuffing casserole 6. chicken fried chicken 7. Meatloaf 8. dirt dessert 9. orange jello salad 10. green bean casserole 11. stuffed green peppers
My cooking tragedies
oh gosh - just about everything I made when I first started cooking was AWEFUL!!! LOL My mom and stepdad both worked full time starting when I was 13, so I took care of my little sister and brother and was more often than not in charge of making dinner. We had a lot of frozen pizzas! But I got creative and tried new things and new recipes, learned from my MANY MANY mistakes, and I think I've come a long way in the last 14 years! :) Oh- except I still can;t grill to save my life! Everything comes out either burnt, raw-ish or ortherwise undesirable! I would love to learn to grill better

Tiramisu Layer Cake
My cake looked beautiful but did not taste very good at all. Everyone at our family gathering liked the frosting and the cake but none of us liked the filling. I would make the cake again some time sans filling. And instead of using off brand coffee liqueur, I would use Khalua for a better taste.

Fluffy Peanut Butter Frosting
This recipe was super easy and tasty. I made it for the topping on my mother's birthday brownies. She LOVED it way more than her own PB frosting recipe - which is really saying something! The only complaint I have is that it was a little too sweet for my taste. I would scale back the powdered sugar to 1 1/2 cups. I also found I had to use extra milk to soften it up, perhaps because I used a reduced fat peanut butter that was a bit drier than the full fat version. All in all, GREAT recipe!

Chicken Pot Pie III
OMG! One of my favorite recipes of all time. It is a warm, creamy and filling dish perfect for a fall evening. I use California veggies, beans and corn in mine, and add garlic powder. My mother raved about this dish and has repeatedly begged me to make it again!
