Chicken Enchilada Soup III

The soup was so good! Our only complaint was that the masa harina didnt dissolve very much so it was a little gritty....but I shouldve looked at the reviews bc another reviewer explained how to fix that. But it was very flavorful and tasted like the Chili's soup, which I LOVE! Thanks for the recipe!

Spicy Slow Cooker Black Bean Soup

SO good...we love spicy food and this was right up our alley! My husband loved this so much he had a second huge bowl of it! He begged to take it to lunch during the week as well....we followed the other reviewers and doubled the spices. It was great!

Oven Brown Rice

This brown rice was so flavorful and good...we couldnt get enough of it! It took a little bit longer to cook in the oven...maybe 75 minutes. We loved it!!!

Sofrito

This sofrito is so good! We use this in our Puero Rican beans and it tastes awesome. The flavor is great and really authentic. My husband worked in PR for a while and loves the food. We made the full batch and freezed it in ice cube trays as per the recommendation.

Chicken Broth in a Slow Cooker

This broth was sooo good! It just cooked in the slow cooker all day and then I pulled the chicken right off of it. We did save the breasts, marinated and cooked them separately. We are still using the broth as we freezed most of it. It is perfect in soups! Thanks for the great recipe!

Catherine's Spicy Chicken Soup

My husband and I love spicy food and this soup totally hit the spot! It made plenty for the two of us so we froze about half of it. It is essentially a chicken chili soup...and it is great!

Delicious Egg Salad for Sandwiches

This recipe was good...I thought it could use more mustard and less mayo and will try that next time. But it is mostly because I am a huge mustard fan! I also love onion so next time I will add more of that. Thanks for the recipe!

Rich Pasta for the Poor Kitchen

This is a great cheap meal! I would recommend using less butter to save calories and I thought it was a bit oily anyways. The next time I will use between 4-6 tablespoons of butter. Overall VERY tasty and fulfilling.

Puerto Rican Steamed Rice

This rice is so great....it made me feel like I was back in PR! My only complaint is that it sticks to the pan really bad but I think it is totally worth it for the rice! Awesome tasting.

Kidney Beans and Corn

this recipe is sooo good, tasty and fast. my husband and i love it...we did add a can of rotel and will in the future, add more kidney beans to make it last a little longer. we eat it so fast because it is so great! thanks!

this recipe is soo great and so fulfilling...it really tastes like authentic puerto rican beans. add puerto rican steamed rice, tostones and you have an awesome meal. we love it! the only changes is that i add a little bit more sazon seasoning because i love it.

Linguine with Fresh Tomatoes

I thought there was too much basil and not enough garlic but that may just be my taste preferences. If I make it again, which is doubtful, I would make changes in those spice amounts. Overall though, it is a good, low calorie pasta recipe.

Frozen Chocolate Chip Cookie Dough Balls

this recipe is delicious! i followed the recipe to a "T" and i kept going back to the freezer for more! everytime i would go back, my husband would ask for one too. not having to worry about the egg is really the key here...i plan to make them again, smaller, and add them to a homemade ice cream recipe. i cant wait!

Bacon and Potato Soup

this soup was so good! after reading the reviews, i was a little skeptical but wanted to give it a try. i followed the others advice and changed 1 c. of the broth to 1 c. of milk for the creamy factor, put in 1/2 tsp of the cayenne pepper, added a little more cheese and added broccoli for more veggies. i want to make it again tonite!

Black Bean Spinach Pizza

this pizza was fantastic! we loved it! we did make a few changes but only due to what we had in our kitchen... instead of the salsa, we used diced tomatoes; instead of onion, we used green onion; and instead of frozen spinach, we used fresh spinach. we also used fresh mushrooms and sauteed the mushroom, spinach and garlic before putting it on the pizza. the taste was really really great and i know that we will make this again! thanks for the recipe!

Slow-Cooker Chicken Tortilla Soup

we LOVE this soup....its our favorite! i make it every time we have family or friends coming over and i dont have to prep as much when i get off work. i do add a can of black beans and a can of corn as well as use all chicken broth instead of water. i throw in a couple raw chicken leg quarters, set it for 8 hours on low and when i get home i shred it and let it cook until our company comes over. its DELICIOUS!!!
