Easy OREO Truffles

These get 5 stars for versatility and simplicity. They took me less time to make than regular chocolate chip cookies. I has some Andes mints on hand, so I replaced about 1/3 of the baking chocolate with those to give the truffles a nice peppermint flavor. Other chocolates could be used, for dipping or drizzling. In addition, flavored cream cheese (think strawberry cream cheese) could be substituted with great results. To "dip," I simply rolled the balls in the melted chocolate with a fork, scooped them up, and shook them a little to release excess.

Broccoli and Carrot Lasagna

This was a pretty good recipe. My husband and brother both liked it, and my husband generally doesn't like lasagnas. We didn't have any garlic powder, so I threw in a few cloves of fresh garlic. I substituted the rosemary with Thyme. I will probably make this again.

Satiny Chocolate Glaze

I've drizzled over round and sheet cakes... doubling the recipe for a 9x13. I don't have a double-boiler, so I just heat on the stove stirring constantly... butter first, and when it's half-melted, I add the chocolate and corn syrup. I usually remove it from the heat before adding the vanilla, but as long as that happens at about the same time, it doesn't matter. Simple, easy, and very professional looking!

Too Much Chocolate Cake

I do think this is a great recipe, but I had to turn the oven down a little so it would bake evenly, and I prefer the mini chocolate morsels...they melt completely.

African Peanut Soup

I found this recipe (or a variation) on another site, and its ingenuity and versatility are what struck me most. It is completely versatile as long as you have rice, peanuts or peanut butter, tomatoes (canned, fresh, salsa...whatever), and some kinds of vegetables. I highly recommend using the onion/garlic, but the proportions aren't crucial. Other than that, what you add is up to you: bell peppers, hot peppers, mushrooms, potato, squash, carrots, celery, brocolli would all work. If you don't have vegetable or chicken broth, water and some (optional) salt does just fine. Chili powder is not necessary, and as others have said, various spcie combinations all work. If you're not comfortable making changes, the recipe as written is good, but might get boring ;-) Tip: base the cook time after adding the rice on the simmer time provided on the rice package directions.

Peach Cobbler Dump Cake I

The ONLY reason I gave this 4 stars is because the original calls for canned peaches. I use fresh fruit whenever possible. I was looking for a way to use up some JUMBO (1 lb each) peaches we got from the local orchard, and this has the most reviews with such a high rating. I now know why! I used about 3 lb of fresh peaches, dribbled with a little bit of maple syrup (2 Tbsp?), and followed the rest as written (but with grating butter as was suggested by many). This is DEFINITELY a keeper with the mod to fresh peaches. (fresh fruit and boxed cake mix... I know... but peaches shouldn't come in a can :-p)
