Corned Beef and Cabbage

Just made this tonight for dinner and it was a total hit! Ommitted the sugar and vinegar, because I had made italian beef with vinegar before and didn't like the bitter vinegar taste. Also, I put the corned beef in first(added enough water to cover meat) seasonings, carrots, potatoes, onions, and cabbage in last so the cabbage was actually steamed. Cooked for 10 hours! My boyfriend said it was the best he ever had. Will definately use this recipe from now on!

Swiss Chicken Casserole II

Delicious! I made it for Christmas dinner and doubled it...I made it just like the recipe states, didn't change a thing...All I can say is YUM!!!! Everyone loved it!

Easy Garlic Broiled Chicken

I made this tonight for my boyfriend and my 15 yr. old son. Boy did we all eat it up! I used 4 boneless skinless chicken breasts, baked at 375 for 45 minutes basting and turning every 15 min. and then poured the juice out to save as a gravy and then broiled each side for like 3-5 minutes. Served it with wild rice. A new favorite at our house!

Chicken Tacos

These were good, I doubled the chicken, added green and red peppers, and added onion. Was kinda bland in flavor so I added cajun seasoning and more spices. With my additions, this made enough for four people. Will make again the same way.

Potato Chip Chicken

I have been making this for almost 20 years, but I use boneless skinless chicken breasts that I dip in butter (I do not marinate) and crushed regular potato chips that I also add pepper, garlic powder and onion powder to. The leftover butter I pour over and bake for 45 minutes uncovered at 350. It is delicious, moist, and sometimes I make country gravy and pour over it and serve with mashed potatoes.

Unstuffing Side Dish

I made this for Thanksgiving this year and it was THE BEST I have ever had! The only thing I left out were the mushrooms because my son doesn't like them, but everyone raved about it. I stuffed my turkey with it and it was so moist and delicious. I even ate it cold and it was great the next day! Will be my stuffing that I use from no on.

Never-Fail Pecan Pie
