Best Spanish Rice

Made this to fill burritos and am impressed something so easy tastes so great. I added diced yellow and green bell pepper and 1/2 a jalapeno with the onion. I might add frozen peas next time.

Butternut Squash Enchiladas

I wasn't sure whether I'd like a red or green sauce with these so I tried both and I can't choose, they're both so good with these enchiladas! I'm very happy I've tried these and will make them again for sure.

Pesto Pizza

This pizza was delicious. I omitted the onion, substituted goat cheese for feta and rep pepper for green and used the Quick and Easy Pizza Crust recipe found on this site. I will definitely make this again.

Quick and Easy Pizza Crust

This is so easy compared to the other doughs I've made. I was a bit worried it was too salty when tasting the dough before baking but it was just the right amount to go with my pesto pizza. Yum!

Spinach Basil Pesto

I've been looking for a better pesto recipe for a while and think I've found it in this one. My modifications were using walnuts instead of pine nuts for cost reasons. And toasting the garlic to remove the fresh garlic bite. Love the addition of the lemon zest & juice.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Love how quick and easy this recipe is. I somehow used all my tomatoes earlier this week so I subtracted it as an ingredient and think this is great without. Served it with brown rice and now I'm satisfied for the night.

Kate's Kale Couscous

I too made this after coming home late from the gym. Was certainly quick, nutritious, and yummy. I was worried I didn't use enough couscous or water but it's definitely enough. My only recommendation to to use more (fresh) kale, it's a wonder food after all, and maybe less butter to lesson the calorie count. Will keep this one handy for quick dinners.

Ricotta Stuffed Squash

I decided to use butternut squash because I knew the filling would fit better and I love butternut squash. Followed another user's suggestion to steam the squash in the microwave, was a major time saver for me. I didn't like how wasteful it seamed to scoop out part of the squash and not use it in the filling, so I added it and turned out great. My last addition was a sprinkle of mozzarella after the squash finished baking and then popping it back in the oven to melt with the oven turned off. Definitely agree it's best with spaghetti sauce. I can see myself making this again down the road.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

Meh. I love the ingredients on their own but together they didn't do much for me. If made again, I'd use feta instead of goat cheese and leave out the kalamatas, they added too much saltiness for my palate (I love eating them on their own normally).

Rich and Creamy Roasted Eggplant Soup

This was so-so. in my opinion. Mine was too watery and the goat cheese didn't really do much to perk up the flavor. Next time I'd use 2 eggplants instead of 1 and use parm instead of goat cheese. I'd try it again with modifications.

Hot and Sour Chinese Eggplant

I had to add additional soy sauce and some rice vinegar to get the taste I wanted. That said it's turned out yummy, especially over jasmine rice.

Very tasty, make sure pumpkin is cooked through before adding to lasagna. Next time I'd dice all the veggies a bit smaller but otherwise this was great.

Chicken and Dumplings III

Perfect comfort food for a chilly October night. I modified the recipe using organic chicken thighs for more flavor, also added chopped carrots, and sautéed the chicken separate from the veggies before adding to the stew. Next time I'll follow other's suggestions of adding more broth/cream of chicken soup. Very easy recipe to make and will make again.

Healthy Garden Salad

Such a different, aka nice change of pace, to make while trying to remain health conscious vs. the traditional lettuce based salads. I made a few additions to the recipe: added pre-packaged shredded carrots, sliced avacado and Compari tomatoes instead of grape. Also used olive oil instead of grape seed due to budget constraints. Will make again for sure.

Vegetarian Moussaka

I did not care for this. The recipe takes a lot of time, and even though I followed the directions to a T, mine turned out very vinegary. It was overpowering for my pallet. Too much working against this recipe for me to ever make it again.
