Black Bean Brownies

Strawberry Chantilly

Light summer dessert -- like strawberry ice cream pie! The sugars are a little confusing -- I believe the brown sugar goes with the crust, and the white sugar with the strawberries. We substituted oats for walnuts (very tasty), and soy whipped topping. If you're worried about raw egg whites, you can pasteurize your eggs by putting them in 140-150 degree hot water for 4 minutes. This keeps in the freezer for several weeks, making it great for if you want to make a dessert ahead of time.

Honey Corn Bread

This is our favorite cornbread recipe. I like to cook it in a preheated 9-inch cast iron skillet for a nice crust (only takes 20 min. this way). I omit vanilla and use milk instead of half-n-half and it works fine.

Roasted Chestnuts

Pretty good. The easiest way to handle chestnuts is to cut a horizontal slit on the flat side. Soak them in salt water for 30-60 minutes. Cook them like the recipe says, and when they are still warm, squeeze the shell on the top and bottom of the slit. The shell will break in half easily and the nut should slide right out.

Greek Lemon Cake

A delicious from-scratch lemon cake! Next time I would add even more lemon zest, and I added an icing of lemon juice and powdered sugar for an even stronger lemon-sweet taste. I used a bundt pan and it came out just fine after 45 minutes.

Crab Cakes II

Potato Clam Chowder
