Roasted Pork Loin

It was good, but dry. I probed it at 145 degrees, but it was dry. I would take it out at 140.

Foolproof Rib Roast

I did an 8lb roast this time for Christmas dinner. Again, PERFECT! Put a little olive oil in the rub and it stuck better to roast. Only had to add a little time at very end due to size...used meat thermometer. AMAZING!!!

Simple Country Ribs

This is a great recipe! I added beer instead of water and probably boiled them an hour and then put them on the grill on low because I had other stuff on grill for maybe 45 minutes? I am shocked at how juicy they are. I have cooked them for 5 hours on low and they are never this good!

Shredded Beef Enchiladas

This really took a long time to prepare and it just wasn't that great. We are from Texas and found it to be "blah". Needed a "kick". My husband thought it needed carne asada sauce on top. I was bummed.

Janine's Best Banana Bread

I made it the first 3 or 4 times with an extra banana and egg, but last time did not have extra ingredients, so made as recipe called for, and it was so much better. All I did was add a tsp of vanilla. And used butter to grease the dish and it was perfect. Did not have to turn oven down this time. Stick with orig recipe!

Milk Chocolate Pecan Pie

To die for! By far the best pecan pie I've ever made or had. You can't really taste the chocolate that much, but I think it makes it hold together better. Yum!
