Grama's Corn Flake Peanut Butter Cookies

Extremely easy to make and for me the proportions turned out just right. Went back about 10 minutes after dropping onto cookie sheet to make the drops a little tighter....was hard to do while very warm.

The Ultimate Chili

I ended up making this on the stove top and it turned out pretty good. The red wine vinegar left it a little bit too tangy for us so I added some beef bouillon to give it a little meatier flavor and that seemed to counteract the vinegar to suit our taste. Will definitely make this again.

Heavenly Potatoes and Ham

Oh my goodness, this was GOOD! I ended up doubling the other ingredients but left the potato quantity the same. I covered it with foil to bake; should have uncovered it sooner so that some of the liquid would have evaporated off more...it was a little runny the first evening we had it. But leftovers were perfect! I highly recommend this dish; it will become a fall/winter staple at our house.

Asparagus Quiche

This was delicious! I prepared it as directed and it turned out perfect. My grandfather had 3 pieces! I used Marie Callendar's frozen pie shells right out of the freezer and the crust turned out just right. I would highly recommend, great for a light supper.

Beef Tenderloin With Roasted Shallots

It is quite good and definitely a special occasion dish because of the expense. The sauce is delicious and I always make a double batch because it tastes so good on everything...not just the meat! I have even made it on it's own as a steak sauce without the shallots.....always a hit!

Eileen's Meatloaf

We love this meatloaf! I used Hidden Valley Ranch dip that I needed to use in place of the plain sour cream and only a tablespoon of the onion soup mix. I was worried that the amount of breadcrumbs would really dry it out but it turned out firm and really moist, not falling apart as has been my experience with some meatloaf recipes in the past. I can't wait to eat the leftovers for lunch today! My husband went back for seconds and even my 1 year old ate it! We will be having this again and again.

Oven Scrambled Eggs

These eggs were light and fluffy and EASY! I only made half the recipe and baked it in an 8x8 baking dish. Stirred it several times so mine came out more like scrambled eggs but fluffier than scrambled eggs cooked on the stove top.

Brisket with BBQ Sauce

I had never cooked a brisket before so was a little nervous......this recipe made it so easy! I followed it to the letter and it really turned out great. Made it for a family dinner and everyone raved. I did double the sauce as previously suggested......made great leftovers as well. I prepared both the sauce and brisket two days ahead....just warmed it in the oven when it came time to serve. Thanks so much, I'll never be scared of preparing brisket again!

Beef and Noodle Casserole

We really enjoyed this and it was a snap to put together! I used whole wheat egg noodles instead of regular and sauteed a chopped onion along with the ground beef. My husband LOVED it! It's a great weeknight meal and very satisfying.

Spicy Sausage and Rice Casserole

This was very good. I did make a couple of slight changes. Upon advice from previous reviewers I used the entire can of chicken broth to prevent dryness. I also cut back on the amount of sausage.....only used a 16 oz package and used mild italian....we don't enjoy very spicy dishes. Finally I used brown rice instead of long grain. It turned out great. I also froze half of it and plan on defrosting it this weekend to see how it turned out. If it did well in the freezer this one will go in my once-a-month cooking recipe box. Thanks Melissa!

Ham and Swiss Casserole

My husband and I enjoyed this casserole although the egg mixture did kind of turn into scrambled eggs when it baked. I will make this again but will play with the egg mixture to try and get it a little smoother. Maybe a white sauce would work well? The flavor of the ham and swiss was delicious. I made one change and used whole wheat egg noodles instead of regular. I would recommend this recipe to others.

B.L.T. Salad with Basil Mayo Dressing

Delicious! I used reduced calorie mayo and added a pinch of salt and pepper to the dressing to tone down the tanginess just a bit. The dressing is a bit thick but if you toss it all together in a large bowl before serving it gets distributed fairly evenly. Very refreshing and tasted just like a BLT! Thanks Kimber!

Ship Island Shrimp Dip

This is really quick! I used a pound of fresh shrimp, chopped coarsly instead of the canned shrimp. My husband could not get enough of it! Very easy and tasty.
