Orange Glazed Carrots

Easy healthy weeknight veggie. I boiled baby carrots until fork inserted easily, about 10 minutes. Drained in strainer. In same pot melted butter, added orange juice (fresh from Orange since I didn't have juice) and then added about half tsp cornstarch. Boiled til thick, about three minutes. Added back carrots and tossed. Loved it.

Chef John's Shrimp Etouffee

loved this. Essentially reduced fat to zero by just spritzing pan with non-stick and minimal butter for veggies. Significantly increase veggies using half a large onion, a whole green pepper, most of a can of diced tomatoes and a few stalks of celery but did not adjust fluids. Just a great weeknight meal.

oven should be at 425. I used 2 ex eggs since that was all I had and a lemon off the tree. Skim milk. Used the small swiss fry pan. Travis loved this. Made enough for the two of us.

Chef John's Smothered Pork Chops

I made this just as written but only two chops for the two of us and increases to two onions since we like them. Kept the sauce the same. Did add some red wine along the way. Served it on couscous. Excellent! No poultry seasoning so just used salt pepper thyme and marjoram. Yum!

Chicken and Mushroom Chimichangas

We loved these. I used chicken thigh instead of breast and added it a little earlier in the veggie sauté process since they can cook longer than the breasts. Used half an onion and half a green pepper and eyeballed the mushrooms. Super easy and flexible. Really really good. Thanks!

Clark's Quiche

I'm giving this recipe 5 stars for how I made it. All the fat and calories in this recipe made me cringe so I lightened it up. The light version was excellent. I made only one quiche so only need one pie crust. Spread about 1/4 cup of nonfat Greek yogurt in bottom of pie (instead of sour cream). Layered on fresh spinach that I had wilted with hot water and squeezed very dry. Then layered on sautéed onion, zucchini, tomato, to which I added a little diced ham (actually deli ham that I had left over from bagette sandwiches). Then layered a little bit of swiss cheese (like three slices also left over from sandwiches). Then topped with 5 eggs plus one egg white mixed with about 1/3 cup of skim milk plus 1 T flour and 1/4 t. baking powder. Popped it in the oven at 350 for the recommended 40 minutes and it was absolutely delicious. Thanks for a great recipe that modifies easily!

Double Tomato Bruschetta

Slight modification. We toasted bread slices under broiler for about 40 sec, they burn quickly!!. Then flipped for another few seconds. Then put thin slice fresh mospzzerella and again for a few secs under broiler. Then top with tomato mix. No cooking the tomatoes. Yum!

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

The final result was really good but it was sort of too much work. I would simplify next time. I used 1 cup wine total. Used 3/4 c whole milk instead of cream. Would use less olive oil next time.

Slow Cooker Split Pea Sausage Soup

I used this as a base recipe. Had a late start on dinner so did not soak the beans. Just put them in with a mixture of water, chicken broth and a couple of boullion cubes plus chopped onion. Only started with about 6 cups of liquid but did add more along the way for a total of about 8-9 cups. After about 30 minutes, I added 4 chopped carrots and 32 celery stalks chopped. Also added some oregano, marjoram, pepper. Simmered for another 30 minutes or so adding liquid as needed. This does tend to stick to the bottom of the pan and burn so stir frequently as it thickens up. Added 3 cut up smoked apple/chicken sausages about 10 minutes before finished. Add a splash of sherry to the soup on serving and stir for a little extra flavor. Served with soda bread. Excellent!!

This makes a small loaf that was just enough for three people with St Patricks day dinner but was excellent. Travis and Austin loved it. Only needed to cook for 30 minutes.

Roast Potatoes

Use the modithe first reviewer, namely use only 1T oil, put in ziplock and toss with oil then add herbs. When dumping out onto pan, don't dump out extra oil, roast 20 min at 450 and then carefully turn (outside oven) and then return to a 400 degree oven for additional 15 minutes. These were excellent and we've tried every variation. Thanks for the info!

Bread Pudding II

I've made this twice, once as written and then once in large muffin tins so that I could keep track of servings and calories. When I used the tins, I made a smaller batch (1 small Draeger bagette, 3 eggs, 1c skim milk, 3T sugar, splash vanilla, dash cinnamon). 125 kC. Bottom line, excellent and very forgiving recipe. Definitely a keeper and great way to use up day old bread/ bagette. Thanks!

Mom's Chicken Cacciatore

made this with just two chicken breasts cut up but left the sauce the same. Did not put chicken in for all of cooking time. Put it in with the mushrooms so that it was tender at the end. Served with mashed potatoes. Travis loved it.

Chicken Marsala Florentine

Used two chicken breasts, and lots of sliced mushrooms. Did not add butter and used fresh tomatoes put in just before the spinach. Served over linguini. We really enjoyed this. Easy and healthy. Probably 4.5 stars.
