Quiche

Did not freeze and baked at 350 for one hour. Did protect the crust halfway through with foil and put on a cookie sheet since I am embarrassed to say, used a prepared crust. Loved this better and other recipe that we have. No prebaking shell is great! Thanks. Did add sauted onion and sub'ed bacon for ham. Yum.

Chicken Marsala

Saute the mushrooms first until the water comes off and then set aside. Then brown the chicken, poured on the wine and add the mushrooms back in. Cook down the wine. Serve with egg noodles and green veggie. Everyone in my family enjoyed this. Thanks!

Mama's Italian Wedding Soup

We really like this. Used ground turkey and browned in pan before. Did use more than recommended seasoned bread crumbs. Put in spinach right before serving. Thanks!

Creamy Au Gratin Potatoes

I nade these as written except that I used a cheese blend that I had on hand that had cheddar in it. They did not have enough cheese flavor even though I added extra cheese. Way too bland (tasted like milk). I would definitely use sharp cheddar next time and add extra cheese. This definitely has possibilities. Also requires lots of salt and pepper. Did pour half sauce over potatoes after one layer. U made enough for large flat casserole and made 1.5 recipes of sauce which was right amount. Thanks.

Asparagus Wrapped in Crisp Prosciutto

I followed the advise of someone else and applied a light coating of olive oil with my fingers to each asparagus stalk before wrapping with half a slice of prosciutto. Too much prosciutto makes this too salty. The oo makes the prosciutto stick. Bake in 375 for 20 minutes shaking once to rotate midway through cooking. This was great!! Garner with a little shaving of parmesan but not too much because of saltiness. thanks!!

Penne Pasta with Veggies

My family loved this. I precooked the broccoli for two minutes in the microwave and reduced the oil/butter. Added salt, pepper, and oregano for flavor. Reduced the sun dried tomatoes to about 1 cup and used the oil for flavor. Also added fresh small tomatoes. Thanks for a great recipe!

Barbecued Beef

I added celery and an onion. Just eyeballed the ingredients. Used stew meat instead of roast. Cooked on high for 5 hours then switched to low since it was done. Served on Kaiser rolls. Fabulous! Thanks.

Aw-some Cole Slaw

This was great. I was very loose with the ingredients (just squeezed the juice of half a lemon that I had on hand) and did add a good couple of shakes of dried dill weed. It was great.

Rosemary Chicken with Orange-Maple Glaze

Made this as written except that I sauteed half an onion cut into thin strips and then added the chicken to that. Used combination of BLSL chicken breasts and thighs (about 2.5 lbs total). Did thicken with cornstarch near the end. Served with couscous cooked in chicken stock with pine nuts and parmesan. Delicious!!

Lemon Mushroom Herb Chicken

I simplified this by breading the chicken (dredge in flour, dip in egg, dip in seasoned breadcrumbs) then followed the rest of the instructions. Used lime instead of lemon since that is what I had. Family loved this over rice.

I took this to a party and everyone really liked it. I didn't have the chopped jalapenos so just put in a few drops of tabasco. Served with sliced sourdough bagette. Used reduced fat cream cheese. Thanks!

Green Chicken Enchilada

I actually tweeked this alot because I was short on time. Used costco precooked carnitas instead of chicken. Heated carnitas per directions on box. Poured a little green sauce in casserole, then dipped tortillas in green sauce a little in pie plate) and added carnitas, refried beans straight from the can, a sprinkle of cheese and rolled. Made about 12 an put in 13 x 9 casserole and topped with remaining green sauce and more cheese. Baked at 350 for about 30 minutes. Family loved it and was really fast to make (like 10 minutes plus bake time).
