Lemon Cream Cheese Frosting

Only used 1 cup sugar and consistency still turned out fine. Not too sweet and you get more of the lemon flavor. There is enough to frost 12 cupcakes. Will be my go-to lemon flavored frosting from now on.

Easy Morning Glory Muffins

Love these muffins! Read and incorporated a lot of the suggestions here into making the perfect muffin for me. Used 1 cup all-purpose flour, 1/2 cup oat bran and 1/2 cup flaxseed meal. Used 1 cup brown sugar. Used 3/4 cup applesauce and 1/4 cup butter. Only used 2 eggs and added bit more cinnamon. Chopped about 8 oz of baby carrots in food chopper but diced 1 Granny Smith apple for better texture and presentation. Filled muffin cups almost to top and did not overflow. Baked for 22 mins.

Perfect Pumpkin Pie

Turned out "perfect" even for first-time pumpkie pie maker. Followed suggestion by others to use 2 tsp. each of pumpkie pie spice and ground cinnamon + 1 tsp of vanilla. After pie has baked for 30 mins. at 350 deg., I sprinkled streusel-pecan topping which I found on the Eagle Brand website with this recipe. Doubling the recipe and using 29 oz. can of pumpkin filled up 2 deep-dish pie crusts.

Amish Breakfast Casserole

Good recipe but definitely liked it better 2nd time around with modifications to suit our taste. Prepared this the night before using 1-lb of reduced-fat Jimmy Dean sausage. I browned the sausage along with chopped 1/2 red onion, medium red bell pepper and 1/2 lb mushrooms. Added 1 extra egg; used fresh shredded hashbrowns; and I omitted the Swiss cheese as I did not care for the taste. Only used 1 16-oz package of shredded mild Cheddar /Monterey Jack Pepper cheese combo. This was more than enough cheese IMO and definitely helped reduce the oiliness on top after baking. Baked this New Year's day morning at 350 deg for 1-hr.

Ham with Honey and Brown Sugar Glaze

This will be my go to recipe for ham from now on. I used a 10-lb spiral-cut ham from Costco. Added the cloves to glaze mixture to simmer. Poured the glaze on ham using small cup making sure the glaze got between the slices. Placed ham in cooking bag and cooked according to directions.

Rosemary Roasted Turkey

Best turkey ever! Brined 12-lb turkey night before using brine recipe from WHIRLLYBIRD. Also followed suggestion by another and mixed all the ingredients the night before to allow all ingredients to really meld and save on prep time next day. Cooked turkey in Reynolds bag at 350 deg. Update: Second time around and still 5 stars but next time will cook breast side up for better presentation (browned).

Cuban Picadillo

Great base recipe and halved recipe because only cooking for 2. Modifications I made were using all red bell pepper, 8 oz black olives, 8 oz tomato sauce + 2 cups water and decreased raisins to 1/4 cup. Also added 2 small potatoes (diced) and about 1 tbsp of capers. Delicious with black beans and rice!

Three-Berry Lemon Trifle

Made this for 4th of July and everyone loved it even picky mother! Used vanilla yogurt, store-bought angel cake, zest and juice of 1 lemon, and toasted walnuts. Also used more fruit than what is called for in recipe. Next time may double the yogurt for slightly less sweetness.

Sopapilla Cheesecake Dessert

Excellent! Did add 1 egg to cream cheese mixture and apple pie filling on top. Reduced butter to 1/4 cup. Drizzled honey after taking out of oven and served cold next day. Next time will reduce sugar by 1/4 cup for both filling and topping.

Easy Garlic and Rosemary Chicken

Used this to marinade 4 chicken breasts for about 3 hrs using mixture of 4 tbsp olive oil, 1 tbsp rosemary, 1 tbsp garlic, juice of 1 lemon and about 2 tsp of lemon-pepper spice blend. Also sprinkled garlic salt on each breast prior to baking. Baked for about 40 mins and used foil last 15 mins. Chicken turned out to be delicious, moist and tender!

Easy Meatloaf

I've been using similar recipe from Hunt's for many years. Original recipe called for 3/4 cup water and 1/2 cup tomato sauce. The sauce topping is what makes this recipe great: I use 2 tbsp brown sugar, 2 tbsp mustard, 1 tbsp red wine vinegar and 1 cup tomato sauce.

Peachy Bread Pudding with Caramel Sauce

Great bread pudding recipe! 1. Added 1 more cup of bread. 2. Used frozen peaches, thawed, 16 oz bag. 3. Used 2 tsps of vanilla. 4. Did not make caramel sauce as it was sweet enough. Update (1/1/11): this has now become my favorite bread pudding recipe after making it a few times. Made this for coworkers Christmas week with rave reviews. Since I made it with the sauce, decided to use reduced-sugar condensed milk for pudding. Also added 2 tbsps of peach schnapps for added flavor. Next time I may double the rum in sauce as I couldn't taste it after baking.

Tomato Chicken Parmesan

Definitely a keeper! Followed instructions as is except subbed pepper jack for monterey cheese. Used Barilla Tomato & Basil Sauce and served with buttered thin spaghetti and steamed veggies. Next time will use 1/2 of cheese/bread crumb mixture as I ended up throwing out a lot. Also from other reviews, I may try sauteing chicken in garlic and adding mozzarella last 5 minutes of cooking.

Artichoke & Spinach Dip Restaurant Style

Was a hit at a baby shower that I co-hosted for about 30 people and had no left-overs. I doubled all the ingredients, mixed everything up, refrigerated overnight and cooked on high for 2 hours in crockpot the next day. Omitted roasted garlic and used Bertolli Alfredo Sauce w/ Garlic and maybe 1/2 tsp of garlic/black pepper salt. Did not thaw and drain frozen spinach either and texture still turned out fine. Giving this recipe 4.5 stars for ease of prep and flavor. Don't know yet if this is the "the best" recipe for this type of dip so did not give 5. However, will definitely make again.
