Rachel's Tomato Basil Soup

Reviewed: Jul. 27, 2015
Super easy to make and very delicious. I love to play in the kitchen trying new recipes. My sons and I have a tradition when I present something new to try. If we like it, it's worthy of our "Hall of Recipes", which is essentially my recipe box:). If not, the recipe gets tossed. I admit, I tweaked this a tiny bit. Here it goes: sautéed garlic with butter first and the added the other ingredients along with salt, pepper, garlic powder a dash of cayenne and a packet of stevia in the raw sweetener (to smooth out the bitterness). Added extra basil chopped, not cut into thin strips, as I didn't want to have strands of basil floating around. Also, I used a can of vegetable broth instead of chicken broth. Thanks so much for this recipe. It has entered our hall:)

Baked Kale Chips

Reviewed: Jul. 1, 2015
Wow! Talk about satisfying your crunchy, salty, craving, this is addicting. I didn't drizzle the oil over the top I kind of tossed it through with a bit of sea salt, garlic powder and cayenne. Make sure you watch and taste periodically:) so it doesn't crumble on you. Healthy and a great snack. Thanks so much for the recipe.

Curried Coconut Chicken

Reviewed: Jul. 8, 2012
This was absolutely delicious!! My two teenage sons could not get enough. Here are some minor changes I made as we like alot of flavor and spices. I added cubed potatoes and baby peas and sauteed that with the onions and garlic (added a bit more oil to criisp up to potatoes). I added ground cardomon, dash of cayenne (more if you like it spicy) and fresh cilantro. You can also add chicken broth to the mix if you want. Fantastic over basmati rice.

Black Bean and Salsa Soup

Reviewed: Jul. 8, 2012
LOVED THIS RECIPE!! Just made a minor alteration Sauteed garlic and onion in olive oil and added with other ingredients. Blended together. Put in pot with one extra can black beans. Added fresh cilantro. Topped each bowl with fresh cilantro and chopped garlic. Try a slice of hard boiled egg on top top as well. Amazing!!

Alfredo Sauce

Reviewed: Jan. 6, 2011
I love this recipe! Toss it with your favorite pasta and it is such a comfort dish for a cold or rainy evening. The only thing I added was a pinch of nutmeg. Make sure you continuiosly stir it so it gets a velvety texture. Thanks so much for this great sauce.

Turkey Pot Pie II

Reviewed: Apr. 2, 2009
Thanks for the great recipe. Made my own pie crust and coated the pie pan with butter flavored shortening. Used soy milk instead of regular milk and added some additional spices (a few dashes of cayenne, rosemary and thyme). Also sauteed garlic with the onion (I can never have a dish without garlic!) Add a bit a flour for thickness and extra turkey and veggies. Fantastic! Thanks again.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Mar. 30, 2009
This was fantastic! Such a simple dish. I usually modify some of the recipes I get from allrecipes however, I didn't alter this one at all. I made it for company this past weekend and my 11 yr old ate most of it. Thanks for the great recipe!!

Creamy Butternut Squash With Cinnamon Soup

Reviewed: Nov. 30, 2008
This soup was fantastic!! Went to a friend's house for Thanksgiving and had to make enough to serve 16. My friend is a chef and has a degree in culinary arts. Her and her husband said it was the best Butternut Squash soup they ever had. Took some advice from others and baked the squash beforehand. Also, steamed two apples and two carrots to purée with the squash. You have to adjust the measurements according to your taste. The soup should stick to a coated spoon. Thanks so much!
