California Grilled Veggie Sandwich

Here are my tips: Slice the Foccacia in two, split it so as to make an actual sandwich. Not open faced as the recipe calls for. Feta is nice but it wont melt. I marinated sliced goat cheese in a seasoned oil mixture for several hours. Basically, put herbs in some olive oil and place the cheese in. The cheese will take on more flavour. Then use this flavourful oil to brush your veg on the grill. Dont marinate the vegetables like some have suggested. In vinegar? Why would you do that to a vegetable! :-)Keep their own lovely flavour please. The raw garlic could be very strong indeed. I suggest roasting the garlic or using powder / dry garlic flakes. I suggest serving with toasted walnuts for crunch and peppery rocket/arugula/rucola leaves for a zip of flavour. Using a portobello mushroom is a great idea but it makes this a veggie burger type recipe and moves it away from its fresh veggie recipe. Eggplant/aubergine I suggest slicing and grilling as this compliments very well.Also, so that it all comes together I suggest wrapping in aluminium/tin foil for a minute or two on the grill. That way everything is hot, the cheese has a chance to melt and your bread wont blacken.

Fluffy Pancakes

Sensationally high and light, I didnt use egg but used Egg Replacer, I used Silk brand Soy Milk, White Wine Vinegar and used a little less butter. Oh! I double sifted the flour and I didnt over mix the batter and they came out brilliant!!

Zucchini Cake III

See my photo of this Cake! Wow, delicious tasting and moist! This is a keeper and recommended! I made it in a square tin 8x8x8x2 inches or 20.3x20.3x5.08 cm. I did make some changes, I followed others and used half apple sauce and half oil, I didnt use eggs but used Orgran brand No Egg - Egg replacer which helps with cholesterol and saturated fats, ( I used pineapple juice instead of water with the No Egg powder and used slightly less than required). I used mixed tiny chopped nuts pieces as had no walnuts and added a few raisins, also used less sugar about 1.5 cups and it was sweet enough for me, also grated in some fresh nutmeg, the store didnt have crushed pineapple so I used small pieces pineapple and well drained, oh! I used half brown half white sugar! Baked for 70 minutes perfect! See my photo its as delicious as it looks!

Apple Pie Muffins

This is a great recipe but too sweet for my taste. I have made them twice now, once with brown splenda and the second time with white sugar (melted in the melted smart balance). If you do not have a sweet tooth use a cup or slightly less of sugar.I dont use eggs and so used Ener G egg replacer and also 1 tablespoon of Flaxseed meal mixed with 1 tablespoon of boiling water to make a paste.I added a teaspoon of baking powder. My muffin were raised high and very light and fluffy. I used smart balance spread instead of butter. I chopped the apples finely but each bite of muffin had apple in it.I added freshly grated nutmeg and cinnamon and I think this is necessary.I also added 1 tablespoon of applesauce. A TIP! Do not over mix your batter! :-)

Breaded, Fried, Softly Spiced Tofu

It is gorgeous, I spiced up the flour mixture like others suggested and I fried it in a shallow mix of vegetable oil and spicy sesame oil. Its a keeper.

Buttermilk Pancakes II

This is a keeper! I made mine naughty and nice. I added some wholewheat flour to the white, I used an egg replacer 'Ener-G' instead of a real egg and I added 2 teaspoons of Vanilla Essence and some Chocolate chips :-)which made the pancakes a bit healthier and a bit yummier :-)

Roasted and Curried Butternut Squash Soup

I roasted 1.5 butternut squash, 1 onion,half a large carrot,half an orange pepper,several cloves of garlic in skin,1 potato, 1 sweet potato, then scooped out the squash flesh and squeezed out the roasted garlic and de-skinned the orange pepper, I sauteed 1 stick celery in 2 tablespoons butter and added curry powder,cumin,paprika,cinnamon, nutmeg,salt,black pepper then all the rougly chopped roasted vegetables, mixed around over the heat for a bit, then added lots of vegetable stock,then added some maple syrup and brown sugar and more seasoning as it needed it.a few bay leaves and freshly chopped parsley and i turned off the heat for the flavour to mingle.
