Eggnog Pancakes
These were thick and rich... totally delicious! I did, however, alter the recipe: substituted 1/4 cup of milk for 1/4 cup of the eggnog, and added a bit of nutmeg, rum, and vanilla... delicious!

Savory Herb Waffles
I have twice used this recipe as the bread component for Eggs Benedict, and both times I went without the smoked Gouda--didn't have it on hand. I doubled the herbs as well, to thinking that this would make up for the loss of the cheese flavor. The second time I used a Belgian waffle-maker, and that really made the recipe. They were crunchy and flavorful, and they'll be a permanent component of my Eggs Benedict from now on! I really recommend that you try these that way.

Plum Blueberry Upside Down Cake
First off, I had to bake this for over an hour. It wasn't even close to done after forty minutes. I only had a 10-inch springform pan, and was a little short on batter. Will make a 1 1/4 batch in the future. Despite the snags, the cake was delicious! I had it with some good vanilla ice cream. I used peaches and had a half cup of pecans on hand, so I threw them in the oven to toast with the melted butter and brown sugar. I will definitely be making this again!
