Macadamia Nut Crusted Mahi Mahi

This was excellent and I think the reason I liked it so much is because how easy it was after I cheated. I have had this dish in many many restaurants and I think mine was just as good... Do you have a trader joe's by you? Well then great, get a jar of their pineapple salsa put it in a small sauce pan and let it simmer on med heat for about 10 minutes... and your sauce is done. Super easy super tasty! I also put a bit of milk on the fish so the coating would attach easier but it wouldn't be as thick as egg and the rest I followed. I served this over brown rice and it was perfect!

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

This is an exceptional dish! In fact I am currently making it for about the 6th time. My Fiancee and I just love it! The only thing I change is I sear it in sesame instead of canola for a little bit more of that sesame flavor. Don't try to make this dish healthy!! I did and it was not NEARLY as good. Just let this be a special treat! That is what it is in our house. Also the sauce goes GREAT over mashed potatoes so I usually make something the next day with mashed potatoes just so I can use the leftover sauce.

Cake in a Jar

While my fiancee was in the middle east I would would send him some sort of treat in a jar. I made breads, muffins (in the shape of a jar), cakes and brownies. They worked every time. Out of everything I sent him his favorite and first to go where always anything that came in a jar. It was a nice piece of home and my baking. Even all the guys in his division thanked me numerous times and even still they will tell me they always got excited for Scott's packages and the jars inside. If you have a loved one deployed do this and they will love it!! Promise!

Super Easy Slow Cooker Chicken

I made this last night for dinner and was extremely disappointed. It made the whole place smell wonderful so I couldn't wait to eat dinner. I did make some changes to it (after doing everything exactly as the recipe called for), I added a packet of onion soup like many suggested but then I also added some garlic, thyme, rosemary, poultry seasoning, oregano and a dash of celery salt. After I took the chicken out I added just a touch of flour to try and thicken the gravy and I then served it over jasmine rice. The whole dish just wasn't as flavorful as I would have liked at all and my boyfriend and I were quite disappointed.

Kona Chicken

I was looking for a recipe I could make that didn't require me to go to the grocery store and I found this! I was a little skeptical but was desperate so I tried it. The only thing I changed was I added garlic and used chicken breast since I had it in the freezer. It came out amazing and is a new favorite!! I served it over rice since the sauce is amazing!

Broiled Scallops

I made this and the only thing I changed was adding parmesan cheese to the top so it would make a crispy crust on the scallop while broiling. I served it to my boyfriend who now requests it almost every time I ask him what he wants me to make. It's so quick and easy to make on a busy night but still absolutely delicious!
