No-Noodle Zucchini Lasagna

I Really LOVE this dish! I've made it several times and have a few cooks notes to share: ~ keep as much water and grease out of the dish as possible. Do salt the zucchini before hand, and squeeze the thawed spinach so that it's almost dry! ~ I prefer ground turkey to ground beef, and I drain off the rendered water and fat. ~ 15oz of ricotta is not quite enough. I supplement with a few T of low-fat cottage cheese. ~ Italian seasoning makes a great spice substitute. ~Forget the hot water; just keep adding red wine until it thins out to a favorable consistency.

Slow Cooker Ham and Beans

Great recipe! I had to give it a full 5 stars to counter balance the few poor ratings and reviews given by others... First off, great use for a post holiday ham bone. After slow cooking all day, any remaining meat simply melts right off the bone. Secondly, yes... It was a little sweet, but not crazy sweet, and sweetness was nicely balanced by the cayenne pepper. I made this with a few modifications: I used sautéed onions instead of onion powder, and garlic powder + salt instead of garlic salt, added one generous tsp of dried rosemary instead of parsley, and fortified liquid by including some vegetable stock. I thought the results were outstanding! The next time I make this I would reduce sugar to 1/3 C, sauté celery with onions and add a few chopped carrots halfway through the cooking time. This one is a keeper!

Pecan Pie

This recipe truly yealds the best pecan pie I've ever tasted. My only recommendation is to reduce the sugar a bit and to use a combination of white and brown sugar. I made two pies so I used 2C white and 1C brown total. My husband is something of a pecan pie connoisseur, LOL, and when HE hands out five stars, it's gotta be amazing!!

Sweet Potato Pie VII

I'm a big fan of sweet potato pies and this recipe is a real winner. Here are a few suggestions: try baking the potatoes instead of boiling. It will give them a slightly sweeter taste, thus allowing you an option to reduce the added sugar. Purée potato mixture in food processor or blender for a lighter silkier texture. Add spices: cinnamon, nutmeg and ginger ( I used 1/4 t of each for a doubled recipe. Lastly, press a few broken pecan pices into the bottom of pie shell before filling.

Turkey Tetrazzini II

I think that this is an excellent base recipe but the cook does need to add a bit of creativity and imagination. I added sautéed onion, red pepper, mushrooms and frozen peas, and I topped with crushed cracker crumbs. This filled the largest casserole dish that I had, and the finished product was a huge hit! Excellent!!
