Reuben Sandwich II

My husband's favorite sandwich is a reuben, and he usually goes to a local deli for one. I wanted to be able to make them at home for him, can I came upon this recipe--it was very well received!! I've made it several times since I found it in early 2005, and the only change I make is to use a little more thousand island dressing than the recipe calls for since that is my husband's favorite part

Roquefort Pear Salad

I thought this salad was really good! I added an extra clove of garlic, and doubled the pecans. And I used goat cheese in my salad, since I don't like blue cheese, but I kept the blue cheese in my husband's salad--he loved it the recipe too! We will definitely be making this again!

Wow, this was great! Everyone really enjoyed it. My only problem with it was that I didn't make enough--I should have at least doubled the recipe!!

Macadamia Nut Crusted Mahi Mahi

I've made this twice now, and each time it has really impressed! I first made it for my husband on our anniversary, and have made it again recently. I have served it with green beans or asparagus and potato corn cakes, as recommended. The sauce smells awesome while it's cooking!!

Classic Bran Muffins

These are really good for bran muffins, and they were better than I expected them to be. I've made these a few times, but never completely following the recipe--I always omit the raisins, and make a different flavor. This is a great base recipe to use and then experiment with different flavor combinations! I have made banana cinnamon, blueberry, and cranberry orange muffins, all of which have been great!

Almond-Crusted Halibut Crystal Symphony

I served this with brown rice and roasted asparagus. It was a fantastic dinner--this is an amazing recipe!! I'm a vegetarian, so I didn't eat the fish, but the beurre blanc was out of this world! My husband couldn't get enough of the fish and the sauce...he said if we weren't already married, this dinner would have gotten me a marriage proposal!!

Fried Ice Cream

I made this for my husband who has always wanted to get fried ice cream when we go out for Mexican food, but is too full by the end of the meal to be able to order it. He absolutely loved this! As others suggested, I added more cinnamon, and it was fantastic. It would also be great with other toppings such as chocolate, caramel, strawberries, whipped cream, etc.

Three Berry Pie

This is such a great pie recipe; I've made it often since I first rated it in 2001. Both my husband and I just love it (he says it is the best pie he has ever had!). The first time I made this, I just used strawberries, blueberries and raspberries, but I now make it with a mixture of fresh strawberries, blueberries, and raspberries, as well as blackberries--this makes it even yummier!! I also use 1/4 cup cornstarch.

Cajun Dirty Rice

I made this tonight, and it was great! I served it with cornbread, and it was an awesome meal! I did made some changes, though. I halved the recipe because it was only for 2 people, but as other people suggested I doubled the amount of dirty rice mix (so in my case I used 1 box of the mix). Even with making only 1/2 the recipe, I still had plenty of rice leftover--it will make great lunches along with the leftover cornbread. The changes I made included adding some green and yellow bell peppers, as well as 3 cloves of crushed garlic. I also doubled the amount of tomatoes with chilis, as I like tomatoes and spicy food. Also, since I am a vegetarian, I used meatfree "ground beef" & spicy "sausage" (I use Morningstar Farms, which tastes so much like the real thing that no one believes it is vegetarian and totally meat free!). This was really good, and I will definitely be making this again!

Mock Chicken

I'm a vegetarian, and I use tofu in recipes all the time--thanks for this great idea! I really like the sort of firm chewiness the freezing gives the tofu. I have used this method ever since I stmbled upon this "recipe" about year ago, and now this is the only way I prepare my tofu!!

Potato Squash Cakes

I found this recipe because I was trying to make potato corn cakes, and this was the closest I could find. This gave me some good ideas and a good base to start with. Instead of the squash I used corn, and instead of the garlic salt I used real garlic, which I think gave it more flavor. I really liked the outcome, and the dish was really good. I think this recipe is really versatile, and could handle other spices depending on what you are serving it with, and I will definitely make this again!

Best Brownies

These were just ok, certainly not the best brownies ever. I have made them twice--the first time with the icing, which I did nt like. So I made them again, this time without the icing, and the brownies were just alright. I was very dissapointed.

Creamy Au Gratin Potatoes

My husband loved these potatoes. However, I though this recipe was just ok, not great. Like others, I found it to be too bland...but with just a few improvements--a mixture of different cheeses, perhaps some garlic--it could easily be 5 stars. I will probably make this again but with the changes.
