Eggplant Parmesan II
Excellent! My picky teenager and husband loved it. I did not peel the eggplant, as I like the texture of the cooked skin. I salted the eggplant first as suggested by other reviewers (sprinkled sea salt over slices, placed in colander for 30 min, rinsed, patted dry with paper towels)and the texture was perfect. I will definitely make this a monthly meal.

Creamy White Chili
I was tempted to cut the recipe in half because it made 8 cups, but am so-ooo glad I didn't. It disappeared in two days. We couldn't get enough of it. Great recipe. Didn't change a thing!
