Miss Betty's Super Quick Dinner Rolls

Reviewed: Dec. 22, 2010
I thought these were just great. I got my 8year old daughter to mix them up. They were so easy especially compared to the hassle of yeast rolls! I didnt think they lacked flavor and the texture was perfect -lovely and soft without being cake like. I think it would be easy to play around with flavor by adding herbs and cheese etc another time but i certainly didnt think they tasted bad. I think this is a useful recipe that I will use again and again when i want rolls with soup etc.

Puffed Cauliflower Cheese

Reviewed: Nov. 15, 2010
I've made this twice in one week now, so you can probably tell I liked this! I didn't find it took long to make; my tip -use a processor to grate the cheese or buy ready grated to save time, and an electric whisk for the egg whites. The only changes I made were to add a pinch of mustard powder and garlic powder to the sauce, that's all. I've made cauliflower cheese MANY times before and I liked the texture of this one a lot more than any others. I have young kids and they all finished their's without a fuss.

Pasta with Roasted Butternut Squash and Sage

Reviewed: Jul. 14, 2010
I loved this. Absolutely great use of butternut squash. Not too difficult and a hit with my kids. I used vegetarian sausage in place of the Turkey sausages (made myself from seitan) Can't fault it at all; had to stop myself eating 2 portions!

Veronica's Apple Pancakes

Reviewed: Jul. 11, 2010
I made these this morning and I didn't think they were that great. They were lacking much flavor and were kind of heavy textured. They were ok but I don't think I would make again

Chicken Makhani (Indian Butter Chicken)

Reviewed: Jul. 10, 2010
I made this vegetarian by using chicken seitan. (you could using Morning Star chicken strips or store brought seitan) I also made the alterations suggested by the first reviewer -I subbed heavy cream and cashews. I am not sure if its a mistake but I used canned tomato SAUCE not paste as it mentioned sauce in the method and it was a large quantity. Anyway, this is one I will be adding to my recipe box for sure. I love the flavor and I love the simplicity :-)

Insanely Easy Vegetarian Chili

Reviewed: Jun. 25, 2010
I really liked this chili for the fact that it didn't need any meat substitute for depth of flavor. (I had brought some in anticipation of chili but glad to find it wasnt needed). Plenty was provided by the other ingredients, particularly the mushrooms (I don't normally use them in chili). I used baby portabello. I used canned tomato sauce instead of whole tomatoes (425g size) and I left out the green pepper because I don't like them. I also used half pinto beans/ half kidney. APart from that, nothing was changed. Will definitely make again.

Traditional Style Vegan Shepherd's Pie

Reviewed: Jun. 25, 2010
I made this with a couple of alterations as I am vegetarian, not vegan. I made the mashed potato with instant mash; I didnt use the olive oil or the cream cheese. For the bottom layer, I used sweetcorn as I didn't have any peas. I also added some veggie worcester sauce. It was meant to be a couple of tbps but ended up about twice as much as it sloshed in quicker than i expected! However, this seemed to add a special touch as the children were fighting for extras! Nobody noticed the topping was made from instant mash and I would make it this way again. A successful family meal in my opinion

Waffles I

Reviewed: Jun. 20, 2010
For a simple and classic waffle recipe, this was perfect. The flavor couldnt have been better. I have made many waffles with more extravagant and luxurious ingredients such as sour cream or buttermilk and real butter, but these were better and I liked the fact I didnt have to hunt for lots of ingredients.

Whole Grain Waffles

Reviewed: Jun. 20, 2010
Nice recipe. I used whole flax seeds as I didn't want to mess up the blender. Kept everything else the same. Kids loved them. I was pleased of the quantity they yielded without using too much of any one ingredient.

Grandma's Slow Cooker Vegetarian Chili

Reviewed: May 3, 2010
I really like this chili. I have made it several times. It's simple to prepare and tasty. The baked beans give it a depth of flavor that my kids like. I left out the sweetcorn and it was still plenty in quantity and flavor. My only criticism is I could only find one brand of black bean soup (Progresso). I looked at the ingredients and it is NOT vegetarian. I subbed cooked black beans instead.

Easy Vegetable Pot Pie

Reviewed: May 3, 2010
I had my doubts about this pie (was dubious about using canned veg but i doubt i could have told the difference once baked), but I will be making my pot pies this way from now on. It was delicious, every crumb was devoured. The only thing i would like to point out is don't allow the pie shells to defrost COMPLETELY otherwise they will stick in their aluminium cases. I had to use a fresh set and defrost for 15 mins only. Theres no way i could have used the completely defrosted ones; they were completely soft and stuck

Simple Whole Wheat Bread

Reviewed: Dec. 1, 2008
I am an experienced bread maker. I make a lot of bread by hand and this is one of the best ones I have tried. The taste and texture are lovely -a hint of sweetness without being too sweet and light in texture. I was wary to begin with that it made so much but I have no regrets and I am glad I did, I will be making this bread again.
