Chef John's Italian Meatballs

I made these this week. They are easy and delicious! Very tender. The best ones I've ever made and my husband loved them. There are some in the freezer for another day.

This was very good. Quite easy to put together and VERY tasty. I had small potatoes, steamed them and used them in lieu of rice. So adaptable! Thanks John.
