No Bake Cookies I

Reviewed: Oct. 2, 2004
This is the best no-bake cookie recipe on this site- or anywhere else for that matter. Perfect! I was also able to do this in the microwave, VERY carefully, but I wouldn't suggest that for someone who has never made these before. I melted the margarine first, then added the rest of the ingredients and stirred well. Then I stirred every 45 seconds, and let it boil for almost two minutes. Then added the oatmeal and dropped the batter onto parchment paper. Thank you for this recipe!

No Bake Cookies III

Reviewed: Sep. 30, 2004
These are very good. Next time I will add more cocoa, to give them a darker look and taste. Be very careful not to overcook the mixture, or else they will have a grainy texture. Overall, a very good cookie.

Jam Filled Butter Cookies

Reviewed: Sep. 26, 2004
Oh my... these are so good, and easy to make. I used Raspberry Jam, but I can't imagine a jam which wouldn't taste good on these. They are so buttery yet light, very much like a shortbread. One tip- I used a spoon from my daughter's tea set to spoon the jam in the cookies. Next time I think I might sprinkle a little sugar on top after they cook. I'm sure they would be good with most any drizzling on top, such as chocolate or caramel. Very versitile, and they look so nice. Everyone will be impressed, but they are so easy to make. Thanks so much! Also, because my hubby is lactose intolerant, I used all natural margarine instead of butter. As another review stated, they didn't look done when indeed they were.

Whole Wheat Pancakes

Reviewed: Sep. 23, 2004
Yummy! These were exactly what I was looking for. I changed the buttermilk for soy milk, and they came out perfectly. Like another reviewer, I didn't have any wheat germ around, so I just added a little extra whole wheat flour. These were nice and hearty, yet light, especially for whole wheat. This is my new official pancake recipe. Thank you!

Banana Banana Bread

Wonderful recipe! Very moist, dense, and full of flavor. I made this recipe into mini loaves; it made three well-sized minis. Next time I'll triple the recipe :) Best banana recipe I have found yet.

Spanakopita (Greek Spinach Pie)

Reviewed: Jan. 13, 2004
This is a really good recipe! Next time I'll add more feta and use much more dough (I already used twice the amount in the recipe). Overall though, this is a great base recipe that everyone can alter to their own liking. Thanks!

Focaccia Bread

Reviewed: Jan. 12, 2004
This was such a good recipe. It was so incredibly easy. My 3-year-old made it with me; she had a blast. I would have liked it to be a bit chewier- does anyone have any suggestions?

Grandma Minnie's Old Fashioned Sugar Cookies

Reviewed: Dec. 7, 2003
This is the best sugar cookie recipe I have ever made. These cookies were everything a sugar cookie should be- perfectly delectible. I made these right in the KitchenAid, not with the pastry blender- and they were perfect. They didn't stick at all; the dough was such a pleasure to work with. My 2-year-old was able to cut them out with me. Thank you!

Light & Tasty Cheesy Scalloped Potatoes

Reviewed: Nov. 20, 2002
I too added ham to this recipe, as ham and scalloped potatoes are inseperable to me. This recipe came out very well. I didn't use all of the flour, more like 2 tablespoons. I also didn't use all of the onion, as the ham carried the recipe by itself. Be sure to use red potatoes, as they won't mush like bakers and retain their shape and flavor better in any casserole like this. One last thing, add quite a bit of pepper, it goes well in this.
