Tortellini Salad

This is a great salad. But what makes it really different is the balsamic vinegar in the dressing. Bottled dressing might be easier but it lacks the class that the balsamic vinegar gives the salad. As is it is great. If you desire a "saucier" salad, double the given recipe.

Slow Cooker Swiss Steak

A pair of cheap steaks, some leftover garden tomatoes and a Saturday afternoon - fantastic! Our whole family including children loved this. We did it like the picture and served it over well seasoned mashed potatoes. The flavor was so great. I substituted fresh tomatoes for canned but I don't think that is a significant difference. But I did do it in the oven instead. 275 - 300 degrees for 4 hours.

Better Than Best Fried Chicken

I used golden mushroom soup and chicken legs (14). I had to add to the flour mixture toward the end but beside that I used all the spices it called for but doubled them per the other reviews. I kept it crispy while cooking other chicken by putting the cooked pieces directly on the oven rack in a 200 degree oven with a baking sheet under them on a lower rack for the oil drips. Very good! I would add more spices but it wasn't bad considering true southern cooking is usually on the blander side of the scale.

This was an amazingly simple and delicious recipe! We leave the tomatoes on or off depending on the child and either way it is a filling meal. Must use fresh basil. And the balsamic vinegar keeps it from being too bland. Just right.

Cornish Finnish Michigan Pasties

These are a must at my house. Can definitely do without the MSG. I bought rutabagas for the first time just for this recipe and have since started using them in other things. This recipe is correct: no need to cook the meat prior to stuffing. I add a tsp of thyme for flavor and my family loves it. I use my food processor to shred and slice the veggies. I actually make a quadruple recipe at a time for my family of 9 and freeze the cooked pasties once they've cooled. Wrap in foil for freezing. Pop the frozen, wrapped pasties in a 350 oven for 30 min; unwrap, place on cookie sheet and continue cooking for another 30 min. These are the best! Also great for letting children help roll out the dough because it is a sturdier dough than regular pie pastry. Enjoy!!

Cranberry Kitchen Cookies

We found this on the back of a Christmas library book called "Cranberry Christmas". The only differences were 2 Tblsp lemon juice instead of orange juice and 1 cup brown sugar. I also substituted half n' half for the milk and added 2Tblsp butter since there wasn't quite enough to cream the sugar. My version was wonderful and the kids even loved them!
