Pizza Crust for the Bread Machine II

I have made this 2X already since I discovered the recipe. Absolutely loved it, and it gave me an excuse to use the bread machine gift from the in-laws. I had never made pizza dough before and I did not have a rolling pin, so I used a can of Pam to roll out the dough. It is essential to let it rest between rollings. I had enough dough to make 2 13" pizzas, so I divided the dough and rolled half of it out a little, then set it aside while I rolled the second part out, alternating between the two. Not perfect circles, but I am working on that. I precooked the crust in a 400F oven for about 4 minutes. I also brushed it with olive oil and a little oregano for flavor before cooking. Don't forget to poke holes in the dough before you put it in the oven or it will poof up like no tomorrow. I only made that mistake once! I then pulled it out put my sauce and whatnots on top, popped it back in the oven for about 8 minutes at the same temperature, and voila Pizza! I burned my first one, and they do not take very long to cook, so just keep an eye on it. I will definitely use this recipe again and again.

Spinach Quiche

Great recipe, exceptionally flexible with ingredients which is good because I like extra cheese. It does make 2 pies however. I would suggest two regular 7" pies. I tried the deep dish, but the were a little too deep. Also I suggest to put the last layer of cheese about 10 or 15 minutes before the end as opposed to 10 or 15 after they first go in. Also this freezes great. I cut it into quarters and it makes a great meal when I am short on time. Just pop it in the microwave and insta-quiche.

French Onion Soup III

Great recipe. I have made this twice. The first time I made it for my girlfriend because her stomach was upset and she could only eat bland food, so I followed the recipe as is. The second time I made it I added the bouillon cube as suggested, and I also substituted 1 cup of red wine for 1 cup of water. This gave an entirely new flavor to the soup, but I like it and it went over quite well.

Cheese Ball I

I made this as an appetizer for Thanksgiving and everyone loved it. Super easy to make, all I did was added scallions as per other people's suggestions. Turned out great, and was much larger than I expected. Still great recipe, will definitely make it again.
