Bran Flax Muffins

These muffins were yummy :) I finely diced the apple instead of grating it and I realized i was out of eggs only when i was making it lol so i whisked some soft tofu then added that instead. Will try again with eggs soon. The muffins came out a bit too moist and didnt rise too much but this is probably because of the no eggs :P i also added some cloves, ground ginger, and a bit of nutmeg because i like the flavour. oh and i didnt add any nuts or raisins. and it made about 16 muffins

Favorite Banana Blueberry Quick Bread

yum! i cut down on the sugar like some reviewers suggested. I added some ground flax and I added some frozen blackberries. I used almond slices instead of pecans and I used half applesauce and half canola oil instead of the shortening :) will make again!

Brown Family's Favorite Pumpkin Pie

This makes 2 shallow 9" pies. and dont forget to separate the egg yolk and whip the whites before adding it to the mixture, I accidently did this the first time.. but it still turned out pretty good! ive made this a couple times after all times its been soo yummy!

good foccacia recipe! i dont follow the directions for the toppings tho. Also I add garlic, basil, and oregano to the dough. and i add ground flax and part whole wheat flour

Favorite Corn Bread

perfect! exactly what i was looking for. i decreased the salt to 1/2 tsp and i used water instead of milk because i was out and i used oil instead of shortening. turned out great!

Classic Macaroni Salad

awesome! comes together very quickly:) i only added about 1 Tbs of sugar, i used cider vinegar insead of white, and i added frozen peas to the last minute of pasta cooking, and i topped it off with chopped boiled eggs and a sprinkling of paprika

Honey Wheat Bread I

very good bread:) i used my bread maker on dough cycle and i added 1Tbs of wheat gluten per cup of flour, and i didnt have evaporated milk so i reduced some milk by half in a pot on the stove and i used a little more whole wheat flour and a little less white. i will definately make this again!

Boston Cream Pie II

i made this for my bf's birthday and it was awesome! I followed the recipe for the cake, filling, and glaze exactly except i added 1 1/2 TBS Cocoa powder to the filling and i used a dark chocolate bar for the glaze instead of the unsweetened baking chocolate. The cake was so yummy, it was the first time i made a cake from scratch and i dont think ill ever go back to using box mixes :) so easy

Blueberry Pie

i used 5 cups frozen wild blueberries, 4 tbsp cornstarch, 1 cup sugar and 1 tbsp lemon juice.(the trick is to taste your fruit, since not all blueberries are the same sweetness) i made the lattice top brushed it with milk and sprinkled the pastry with sugar. Awesome!! my first fruit pie was a hit Thank you!

Buttery Soft Pretzels

so yummy!! It took about 2 hours for the first rise, then i formed the pretzels and let them rise for about 45mins,I used simmering baking soda/water instead of just hot, and i dipped each pretzels in it for 10 seconds. Then I brushed them with butter before baking (careful then brown really quickly in oven!) After baking i brushed them with butter again and sprinkled sea salt on top. Ive always wanted to make homemade pretzels! will definately make again :)

Vegan Mexican Stew

i made this for a potluck and everyone raved about it! i cooked the potatoes and carrots in the veg broth and just added all of it to the soup pot when it was done boiling. i used regular can tomatoes and i used can corn instead of hominy. I also increased the chili powder

Chocolate Cornstarch Pudding

excellent! i cant believe ive been buying those instant pudding boxes all my life! i used brown sugar instead of white, and i used soymilk instead of regular. very rich and chocolatey.. i think next time i'll use a little bit less brown sugar.

Lentil Loaf

really good! just as good as meat meatloaf :) in the last 10mins of cooking i coated the top with some ketchup and sprinkled on some bread crumbs, and i lined my loaf pan with parchment paper instead of greasing it, worked great and came out of the pan easily

Vanilla Ice Cream I

this was my first time making ice cream and the texture was beautiful, it was so rich so you only need a little :) my only complaint is that its waaaay too sweet! i recommend cutting the sugar down by half!

Spinach Brownies

I did not care for this recipe! it was mushy in the middle, and i cooked it for longer than the recipe stated (and yes i drained and patted my spinach with paper towels before adding them to the mix) what a waste:(
