Monterey Chicken Tortilla Casserole

I have made this recipe twice now and absolutely love it. I use one pound boneless, skinless chicken breast cut into bite size pieces. I added 1-15 ounce can black beans, I use one cup cheddar cheese and I added one green onion chopped up. These are the only changes I have made to this recipe.

Creamy Chicken Florentine

I enjoyed this meal very much. I did make some changes, I added 1 tablespoon minced garlic when I was frying the chicken. I cut the peppers into 4th's, added them, the spinach, salt and pepper and the cooking creme all at the same time to the chicken, mixed it well and covered it. Simmered it on low while I started cooking the pasta. I drained the pasta when it was done and added it to the chicken mixture and served. There was plenty of juice even the second day. I served it with a salad and garlic bread.

Santa Fe Chicken Casserole

I have made this several times and my husband really loves it. I have made a few changes. I use 1 lb. boneless skinless chicken breast cut into bite size pieces. I pan fry until its no longer pink. Add first 4 ingredients to chicken, plus one(4 oz) can diced green chili's and 1/4 cup chopped cilantro. I also use 8 inch tortillas and 1 cup of cheese. I use a deep dish pie plate and follow directions spreading one and 1/2 cups chicken mixture 3 times and 1/3 cup cheese 3 times. (The last time I made this, I tried it in the microwave for 25 minutes covered at 30% temperature. It came out GREAT.

Basil Chicken and Pasta

Great tasting recipe. I changed a few things. The ingredients are the same but I used 1-teaspoon pepper, 4-teaspoons dried basil, 2 cups half and half and 1/2 cup Parmesan cheese. I also added chopped broccoli. My husband who is very picky, loves this meal. I serve it with garlic bread.

Cilantro Chicken and Rice

My husband loves this recipe, he likes me to make it often. I did make some changes. I cut up 2 lbs of chicken breast into bite size pieces, put into a crock pot along with the diced onion, red bell pepper, garlic, one 15oz can chicken broth, one 15oz can stewed tomatoes, pinto beans, black beans, corn and chile peppers (I didn't drain any of them). One bunch cilantro chopped, salt, pepper and cayenne pepper. I cooked it on high for 4 hours. I made my own spanish rice. Brown 2 cups of long grain rice in a frying pan on high with oil. After the rice is brown, add 5 cups of water, 4 tablespoons ketchup, 1/4 onion diced, 2 tablespoons parsley, add salt to taste. Bring to a boil, cover and lower heat. Simmer for 25 to 30 minutes until all the water is gone. Put the rice on a plate and add the chicken mixture on top. Excellent meal and soooo easy to make.

White Cheese Chicken Lasagna

My family and I love this recipe. I make two 7 1/2 x 9 1/2 baking dishes. We eat one and freeze the other for the future. The only change I make to this dish is I use 1 pound boneless, skinless, chicken breast cut into bite size pieces. After I pan fry the chicken, I mix the chicken, spinach, ricotta cheese, 2 cups mozzarella cheese and 1/2 cup Parmesan cheese together in a large bowl. It made everything a lot easier. I spread 1 cup sauce on bottom, layer with noodles, 2 cups chicken mixture, noodles, 1 cup sauce, 2 cups chicken mixture, noodles, last cup sauce. Sprinkle with parsley and 1/4 cup Parmesan cheese on top.

Mom's Shepherd's Pie

I have made this before and it was good, but this time I made a few changes. I added one can of corn instead of green beans. I added 1/2 tablespoon chili powder, 1 tablespoon minced onions 1 and 1/2 cups of mild cheddar cheese. I mixed 1 cup of the cheese with all ingredients and 1/2 cup of cheese with the mash potatoes. It came of GREAT.

Juicy Roasted Chicken

I made this last night. I usually use a Carousel Rotisserie which sits on the sink but I wanted to see if this way of cooking chicken was better. It was just as good and juicy. I only had to clean up one pan instead of taking appart and cleaning the rotisserie which takes awhile, so thats a plus. I only used 3 tablespoons real butter and one large stick of celery cut into 3 pieces in the cavity. No butter on the outside. Followed directions using all the other ingredients. I always boil the neck in water while the chicken is cooking to add when making my gravy just to make sure I have enough, my husband and I love gravy on our mash potatoes.I made my gravy using the drippings in the pan, the broth I cooked and flour for thickness. This was the best tasting gravy I have ever made before. I am going to put away the rotisserie and never use it again. This is now on my menu list. Thanks for this GREAT RECIPE.

Parmesan Chicken

I have made this recipe in the oven and on the stove. I like it better cooked on the stove and so does my husband (who is very picky). I have taken advice of others and I add 1/4 tsp of garlic powder, thyme and oregano, 1 tsp basil and 1/4 tsp salt to the Italian seasoned bread crumbs. I brown the chicken as stated on the recipe in butter and olive oil. It comes out very moist inside and crunchy on the outside. This is now one of our favorite dinners.

Broccoli, Rice, Cheese, and Chicken Casserole

Excellent meal, my husband loved it. I did make a few changes as suggested by others. I used Basmati rice because I love the flavor. I cooked it in 2 cans of chicken broth and 1/3 cup of water in a rice cooker. I used 1 and 1/2 pounds of boneless, skinless chicken breasts cut into bite size pieces. I fried the chicken until it was no longer pink. I combined 1 can each cream of mushroom and cream of broccoli soup, 1 cup milk, 12 ounce bag chopped broccoli, 1 pound mild cheddar cheese and 1 packet Lipton onion soup mix in a bowl. I added the cooked rice and stirred until all ingredients was mixed. I poured the mixture into two 7 1/2 x 9 1/2 baking dishes. I cooked one in the oven for 30 minutes at 350 degrees and put the other in the freezer. It turned out sooooo good, I will make this dish one of my favorites.

Brown Sugar Meatloaf

This meatloaf was absolutely the best I have ever made. My husband is a VERY picky eater and he said to put this on our repeat list. The only changes I made was to use ground turkey, bread crumbs and as others had suggested put the ketchup and brown sugar on top. Thanks for this great recipe.

Phoenician's Key Lime Pie

I have made this pie for my friends and family many times, and each time I make it, I get sooooo many compliments on how good it is, especially the crust. This pie has become one of my favorite request from everyone when I have get togethers.

Cinnamon Swirl Bundt Coffee Cake

This was excellent. I doubled the swirl mixture using brown sugar and cinnamon instead of white and cooked it at 350 degrees for 46 minutes, I also put white frosting on it. as others had suggested. Everyone loved it. I will make this recipe one of my favorites.
