About this Cook
I enjoy cooking for myself and friends. What was once just a survival tactic has become a hobby. It's nice to be able to actually bring something to a potluck at work instead of purchasing it at the grocery store!
My favorite things to cook
I normally like to cook things that are not too complicated as I do not always have a lot of time on my hands. On my days off, I may tackle something out of the ordinary. I like to also create dishes out of what I have left over in the refrigerator. That's fun.
My cooking triumphs
I guess I was kind of amazed when I made my own chicken stock some months ago. It has come in very handy.
My cooking tragedies
One of my earliest rememberences of a cooking tragedy was when I decided to bake a chicken without defrosting it first. I tried to serve it after removing it from the oven at the specified time and it was still raw. After two or three additions returns and removals from the oven it was decided that we would go out for dinner.

Pico De Gallo
I make a variation on this using all of the ingredients here plus lime. Fresh garlic is best, but I have used the powder before. I think the more you refrigerate the pico, the better it is. I know a lot of people who absolutely hate cilantro. If you are one of them, leave it out. Add more or less of the main ingredients to make the recipe yours. Use the freshest ingredients available to impart the cleanest flavor.

Rhubarb Stir Cake
I really enjoyed this recipe. When it came out of the oven, it looked like it actually needed to go back in for another 10 minutes, but I resisted. I'm glad I did because the next morning the texture was perfect and still moist, but not as doughy. With the vanilla added it reminded me of a fruity bread pudding. This one's a winner!

Impossible Coconut Pie II
I agree very much with the previous rater. The recipe couldn't be easier. I enjoyed the pie very much, although I will probably use three eggs instead of four. I thought the fourth egg made it a little too eggy. My friend, who I consider a marvelous cook, thought the pie was flawless. Yes, I will be making it again!
