Cinnamon Bread I

This was excellent and easy. Mixed wet and dry ingredients separately, then stirred together just until blended (as you should for any quick bread). I doubled it and put 1/2 in a stoneware loaf pan and 1/2 in a bunt pan. For both I put 1/2 the topping in the middle of the batter and 1/2 on top. (I did NOT double the topping as many have suggested, though I did use brown instead of white sugar. It was plenty cinnamony and sweet.) I didn't even have butter or margarine, so I used a honey walnut cream cheese spread in the topping. 50 minutes for the bunt, 60 for the stoneware. I happened to be eating a whipped strawberry yogurt for breakfast when I ate this bread...spread it on top of my slice and it was an awesome combo!

A Good Easy Garlic Chicken

Baked Ziti IV

This was really good. Like lasagna with a pleasant twist. And easier since you don't have to fiddle with lasagna noodles. I did use a bit more mozzarella than called for, but when it was done I think that was unnecessary. Whole family enjoyed it. Thanks!

Extreme Banana Chocolate Chip Bread

This recipe is so simple, and the bread is delicious! We don't like nuts, but often sub chocolate chips. I always use 4 medium bananas. I can use all of the batter for 4 mini loaves (start checking at 30 minutes), or 2 mini loaves and one regular loaf. Yum!!

Spinach Quiche

Completely awesome! I bought a 2 pk of deep dish pie crusts, and there is no way all of this will fit into one. Maybe if you have your own super deep dish and make your own crust it would fit. Anyway, I followed another reviewer's advice to divide the spinach mixture evenly, but make an egg/milk mixture for each and pour over top (so double the egg mixture and divide). One crust I pre-baked a few minutes, the other I didn't. No one complained of soggy crust, so I don't think it matters. I only tried one, not sure which it was. Refrigerated over night and microwaved slices the next day...wonderful!

Caramel Apple Pork Chops

This was easy and very good. I did serve it w/ mashed potatoes and green beans as suggested; it made a nice meal. I like that it can easily be kept warm until it's time to put it on the table. The only reason I didn't go 5 stars is that I try to reserve those ratings for dishes that really wow me. This was great though, and I will do it again.

Belle's Bacon Baked Beans

This was very easy to make (put in slowcooker for 5 hrs. on high), and it was quite good. I prefer sweet beans, that's why I chose this recipie. My dh's grandfather said over and over they were the best beans he's ever had. That's a pretty good compliment to the recipie. I have had better, so that's why it's a 4 for me. I'd make them again. I used a pound of turkey bacon instead of sausage...that was the only hard part, cooking all that bacon.

Cheddar Mashed Potatoes

Yum! And I haven't even finished the recipe yet! I boiled the potatoes, drained them, put them in my stand mixer with the other ingredients (sans cheese, bacon and chives as per family preference), and mixed it all up. We would LOVE to eat it as is, but...Easter is tomorrow and that's what it's for. I know it will just as good baked. I was looking for a make ahead basic mashed potato recipe, and this is perfect. I've always just eyeballed adding butter, milk and salt as I saw my grandma do, but it's nice to have an actual recipe. I like the sour cream over milk, too. Thanks!

BBQ Country Style Ribs

I've followed the directions exactly on this, and I've used the following alternate mehod: no lemon, but covered bottom of large roaster w/ water. 350 degrees, covered for 1.5 hr, then drain fat and add bbq, cook another 30 min. uncovered. Both methods worked well. I think I prefer no lemon, but it was fine with it. I like the alternate cooking temp and time because it gets done faster, and is plenty tender.

Shrimp Tacos

These were really, really good, and I didn't even have a mango. I followed the directions for sauteing the shrimp in the honey butter, and they were very good. I was skeptical, but noticed most reviewers who did not recommend the honey butter had not appeared to actually try it. I made a simple honey butter by combining equal parts honey and softened butter. We loved this, and adding the mango next time will be an added bonus. Thanks, abewasabe!

Make Ahead Lunch Wraps

These do take a while to assemble, but then it is so great to have such an easy, delicious, healthy meal on hand!! I microwave them from frozen at 2 min. 30 sec. and they come out hot and ready. I prefer salsa and sour cream on the side. We've had them in the freezer for at least a month, and they are still fine. I wrapped them in plastic wrap, then put as many as I could fit into a gallon size freezer bag. I ran out of tortillas but still had filling, so I just scooped a serving sized portion into plastic wrap and froze them sans tortilla. We'll just heat them up and put them in a fresh tortilla when we are ready for them.
