Veggie Pate

Excellent recipe! I hated paying $5 for a small veggie pate at our local farmers market. This was so easy to whip up and I made 2 large pates (2 cup ramekins) and 4 small pates (in 3/4 cup ramekins). The flavour and texture are great. I'll defintely be making this one over and over again.

Best Cream Of Broccoli Soup

Excellent recipe. I did make a couple changes. First I added a couple cloves of garlic when I was sweating the onions and celery. Instead of milk I used a can of evaporated skim milk and topped it up to 2 cups with skim milk. And lastly, the most important thing.....add a package of light Boursin cheese when pureeing the soup. MMMMMMMMMMM Super creamy and rich but still very healthy!

Ultimate Turtle Cheesecake

The flavors of this cheesecake were good but the crust was a huge gooey mess. There was no definition between the crust and the caramel/pecan layer, the two just combined to mush. Adding up the cost of this cake (about $15) I was very disappointed . They ONLY reason I'm giving it 3 stars is because it still tasted good.

World's Best Lasagna

The sauce for this lasagna was exceptional! I'm glad I doubled the recipe so I have extra sauce for another time. My problem is that the cheese did not set up so when I pulled out the first piece the "insides" spilled out. (This is the reason for 4 stars instead of 5) Fortunately the flavours were still great and my brother-in-law and his girlfriend didn't seem to mind the messy lasagna. (It's great to have people to test new recipes on!) I did put egg into the cheese mixture so I'm not sure what went wrong. I used fresh, store bought lasagna sheets tonight. Next time I might try the no boil lasagna to see if that helps. All in all this is a keeper if for no other reason then the sauce.

Tzatziki Sauce

Just a note to everyone who doesn't want to take the time to drain yoghurt and cucumbers. 1) Use greek yoghurt. This is available almost everywhere, even small grocery stores in northern Maine. 2) Shred the cucumber with a box grater. Then place the cucumber in a clean kitchen towel and wring out the excess moisture. The tzatziki will be good to eat right away but is better if left to sit for a couple hours so the flavours meld together.

Sarah's Rice Pilaf

This was a good start to a great recipe. I did change it up a bit because I felt that a 50/50 ratio of rice to orzo was a bit much since orzo expands so much more. Basically I just increased everything but the orzo. (1 cup rice, 3 cups broth, added a tbs of olive oil) I also sauted the rice with the orzo. It turned out great but I think I'll play with some herbs next time I make this dish. Also, I had no garlic (very odd for my kitchen) but did have garlic butter (the real stuff, not the "spread") so I used that instead.

Sweet Chipotle Grilling Sauce

Thicken this up on the stove and you have the BEST WING SAUCE EVER!!! When I get a can of chipotles in adobo I puree the whole can and then add to taste. The rest of the puree freezes great so I don't end up wasting the rest of the can.
