Crustless Cranberry Pie

Love this recipe ... quick, easy, and delicious. For my taste, I prefer using 1.5 cups of fresh cranberries (less tart than using the full 2 cups), 1/2 tsp almond extract, 1/2 tsp vanilla extract, and no nuts. The batter is the consistency of soft cookie dough. After baking for 40 minutes, the finished pie looks beautiful, and it tastes just as good as it looks. I will be making this again next Fall when I can get fresh cranberries.

Okra and Tomatoes

Very easy, quick, and tasty! :) I was a little skeptical at first, but this turned out to be a great recipe for okra. I don't like celery so I omitted the celery and used 1 bell pepper instead. Also, I added some garlic powder, paprika, and a small amount of cayenne pepper. I used canola oil for sauteeing instead of bacon grease (I omitted the bacon altogether to make it more healthy). The result was very yummy! And we didn't have a problem with the "slime" normally associated with okra -- maybe sauteeing the okra took care of this. I will definitely make this again.

Broiled Tilapia Parmesan

This is my new favorite recipe for fish! :) So quick, easy, and delicious. Even my picky 4-year-old likes it. At first I was a little skeptical about having mayo in the sauce mixture; but after broiling it, the resulting sauce is VERY good. This goes well with baked asparagus (asparagus seasoned with butter/olive oil, salt & pepper, then baked at 400 F oven for about 15 minutes). Yummy! :)

Cheesecake Topped Brownies

I made this recipe as written (except that I omitted the chocolate frosting -- the dessert is rich enough already). It worked beautifully!! :) I used a 9x13 glass baking pan greased with canola/vegetable oil, and the brownies didn't stick at all. I used a fudge brownies mix, so the brownies were moist and fudgy (not dry) even after 45 minutes of baking. This is a keeper! :)

Krissy's Easy Chocolate Triple Layer Pie

Great recipe!! Very easy, fast, and delicious. The recipe is also flexible -- which I like. I didn't have 2 pkgs of chocolate pudding mix, so I used 1 pkg of chocolate pudding mix + 1 pkg of white chocolate pudding mix which I had. I also didn't have chocolate graham cracker crust, so I used the crust that I had -- regular Pillsbury pie crust (baked first before filling). The pie had a good texture and was very yummy :)

Blueberry Crisp I

After reading the other reviews, I decided to make this dessert with the following changes to the topping: 1/4 cup (instead of 3/4 cup) white sugar, 1/2 Tbs cornstarch, 1/8 tsp cinnamon (instead of nutmeg). I also reduced the amount of boiling water to slightly over 1/2 cup (instead of 1 cup). The result was perfect!! Not too sweet and not too soggy. I'll be making this again tomorrow :)

Mini Meatloaves

Excellent recipe!! Very easy, fast, and delicious. I have made this 4 times in the past 2 months, and always got requests for the recipe. I add garlic powder and onion powder (about 1/2 tsp each) to the meat mixture, and it's just perfect! I'll be making this again tomorrow :)

Restaurant-Style Potato Skins

Very yummy!! : ) I like to make this for my husband and friends, because they just love these potato skins! These are relatively easy and quick to make. However, I found that I need to cook the potatoes longer in the microwave (about 20 minutes total time). It's probably because our old microwave has a lower than normal wattage.

Green Pepper Pork Chops

Delicious dish that is quick & easy to make. Pork chops are very tender and tasty. I used red and green bell peppers to make the dish more colorful. The recommendation I have is to cook the bell pepper strips (and maybe the sauteed onions, too) only for the last 15-20 minutes of cooking time, otherwise they would get very mushy.

Chicken With Mushrooms

Tender, juicy chicken; a very tasty chicken dish. We love mushrooms so we liked this dish a lot! Note: 1 egg was more than sufficient for coating the chicken. I didn't have any Italian bread crumbs so I used plain bread crumbs spiced with Italian seasoning (I used more than 1 cup, however). Also, I used shredded mozzarella cheese instead of sliced. I served this dish with Spaghetti Squash (got that recipe from this web site) and Italian Green Beans; they complement each other very well.

Spaghetti Squash I

Very colorful and tasty dish, and it is relatively quick & easy to make. The spaghetti squash has a great "crunchy" texture that reheats well. I added extra garlic and feta cheese because my family likes a stronger flavor. I have served it to guests and received lots of compliments on it. We love this dish!

Bread Pudding II

Surprisingly quick and easy to make, with AWESOME result!! :) I took it to a potluck today and got LOTS of compliments. Note: I doubled the recipe and baked it for 55 minutes in the oven because the center part didn't look "done" after 45 minutes.

Beef Noodle Shepherd's Pie

Very tasty dish that is quick & easy to make. I used 2 lbs ground beef and added some carrots (cubed), canned green beans and corn to make the dish more colorful. Onion soup mix (1 packet) gave the dish a good flavor. Idaho instant potatoes worked very well and was a great time-saver. I used about 8 cups of mashed potatoes in order to get a decent amount to spread on top of the beef mixture (my 9x13 baking dish was full). This is a great 1-dish meal!

Cajun Crawfish and Shrimp Etouffe

I love the flexibility of this recipe. I am not a fan of celery, so I substituted fresh okra (I sauteed the okra in oil for 20 minutes prior to adding to the recipe). That worked well :) My husband does not like crawfish, so I substituted 1 lb of cooked, diced chicken breast to the recipe at the same time that I added the vegetables. That also worked well :) Instead of fish stock, I used chicken broth. My family loved the resulting dish -- this is definitely a keeper!!

Strawberry Upside Down Cake

I followed the previous reviewer's modifications to make this cake. I put mini marshmallows on the bottom of the pan, then poured the yellow cake batter over it. Then I arranged sliced fresh strawberries on top of that, and poured strawberry gelatin powder on it. After 30 minutes in 350 oven, however, the cake was still liquid at the center. So I baked it longer, checking every 5 minutes. The cake was done after about 45 minutes of total baking time. The marshmallow crust was browned, but thankfully not burned and it tasted fine. The cake was delicious! It was also easy and fun to make. Note: next time I will try using just 3 oz of gelatin powder instead of 6 oz.

Steak Mix-Up

Very easy and quick to make ... a great dinner in less than an hour! It makes a lot, too (serves at least 6). My family likes hot/spicy food so I added a few fresh serrano (or jalapeno) peppers to the dish during the last 10 minutes of cooking time.

Cherry Icebox Pie

I was a little disappointed with the texture of the pie -- it was runny, especially toward the center of the pie. I even baked it several minutes longer to try to firm up the pie, but it would not become firmer. I brought it to a potluk and many people liked it a lot, but to me the taste was a little too sweet (the taste of sweetened condensed milk was too obvious/strong). However, this pie was very easy & quick to make.
