Fast and Easy Creamed Spinach

Reviewed: Dec. 26, 2014
Best creamed spinach I ever had, and I love creamed spinach! It actually TASTED like spinach, novel idea :) Very easy to make and for the first time, I would change nothing in a recipe. Well I correct that - I would double it as it wasn't enough! But seriously, this is enough to barely serve 4. Everyone wanted more but just not enough. Enjoy!

World's Best Pasta Sauce!

Reviewed: Jan. 27, 2013
Yes, excellent recipe and easy to customize! I made it as is with one modification: I added a dry red wine instead of water because I really felt water would dilute it too much. I also cooked it in a slow cooker (prepared as is, then transferred to a slow cooker for 4 hours). The taste was very flavorful without being overbearing and perfectly thick. I am not a fan of fennel but the small amount compliments the sausage really well. Next time, I will add bay leaves (not sure it "needs" it), mushrooms and try ground turkey as oposed to ground beef.

Red Quinoa and Avocado Salad

Reviewed: Jan. 16, 2013
Fantastic! Made it as is, and it was very good - 4.5 stars as written. But I made a couple of slight tweaks to really add that little extra: - Extra 1T lime juice - Extra 1/8t of cumin - Add 1/8t garlic powder To me, that added the extra "dressing" and tiny extra punch that made this out of this world! On a side portion, I also mixed in a bit of oil/balsamic as other suggested, but I thought that confused the taste of the lime/cumin. It was still good, but a bit off. Will add this to my staples, SOOOO easy to make especially with cooked quinoa at the ready!

Homestyle Turkey, the Michigander Way

Reviewed: Nov. 24, 2012
I have made plenty of turkeys in my day, usually brining. I thought I would try something with a bit more seasoning and with the rave reviews this one gets, thought I would try it. It was only OK - nothing near the OMG level these folks are talking about. Usually, my turkey get "oh very juicy" or "very good". Not one compliment here (nor any disses, and my family is frank). The meat was not dry, but also not as juicy as brining yields. The onion flavor distracts from turkey itself. And for those of you who love the crispy, brown skin to nibble on while carving, fughetabatit! I think for my next turkey I will combine some of the ideas here and brining.

Slow Cooker Roast Beef

Reviewed: Sep. 26, 2012
Made this precisely as is, even though I had my doubts about the 22 hours like most people say. I can't stand it when people write a review for something they haven't even tried...anyway... This was OK as is, a bit too dry, of course because of the cooking time but nothing the resulting gravy mix could not fix (made with 2tsp cornstarch in water - was great). Here is what I will do different next time, now that I have tried the baseline recipe: 1. Cook for 10 hours max 2. Add in a bit of red wine in addition to the water and the soy sauce (easy, since you just need to leave the last 1/2 inch of the roast uncovered) 3. If I have time, will sear the sides before putting it in the crock pot 4. Will pepper all sides before putting in the roast (wasn't enough to just put it on the top) This had a great taste, fell apart (no cutting this baby) and I guess these changes will make it a 5.

Crustless Spinach Quiche

Reviewed: Sep. 20, 2009
All the reviews are right - perfect basic recipe that you can make your own. This gets 5 stars AS IS and it can even be better! The second time I made this I added bacon and omitted the oil (and cooked the onions in the bacon greese). I also added 2 more eggs (most people say add one, but I went off of consistency. Enjoy, be creative and have fun! :)

Lime Chicken Soft Tacos

Reviewed: Jul. 9, 2009
I can see where this would be good (I could taste the potential), but it just got too dry for me...not a keeper and I can usually make anything work - but slow cooker or not...it just didn't work...

Bob's Awesome Lasagna

Reviewed: Jul. 9, 2009
I could not believe how easy yet how GOOD this recipe was. Here are the tweaks I made: Added more meat- used 1lb of ground turkey and 1/2lb or hot italian sausage ground up, used 1/2 ricotta and 1/2 cottage cheese (this was the key I think - it needed some ricotta but did not want to overwhelm it with it - actually it calls for 16 oz total, i use about 10oz ricotta and 10oz cottage cheese, added mushrooms - that is the beauty of this recipe - you want something...ADD IT :)

Penne a la Vodka II

Reviewed: Jul. 9, 2009
EUREKA - I found the recipe I have been searching for! Now please note I gave this 4 stars as it is writen here (cos I found it a bit bland), but I did add a bit of chili peppers, a bit more garlic and garnish with fresh diced tomatoes and VOILA - 5 STARS! I think stewed tomatoes are important for coloring, you don't seem to get that with diced as much. Also, you can use 3/4 or even 1/2 of the cream they use here. Left overs heat up well too.

Herbed Chicken and Fettuccini

Reviewed: Feb. 22, 2009
This dish was decent, but nothing special. Made it as described here, but next time I will try more spices to zip it up. Not sure how anyone's sauce came out runny - mine was almost too thick. I thought maybe it would be better the next day...didn't reheat well AT ALL.
