Hot and Spicy Tofu

Excellent recipe for an excellent meal! The only alterations I made were that I used olive oil instead of peanut oil, green pepper from my garden instead of red pepper, rice vinegar instead of white vinegar, and I marinated my tofu for an hour prior to cooking. I placed in on a bed of quinoa. This dish came out very tasty and will become a staple in my household. Thanks for sharing!

Tofu Parmigiana

This tofu dish was quite yummy. I used Elena's version for preparing it with 2 beaten eggs and flour to coat. I used apprx. 1 cp of panko bread crumbs instead of 1/2 cp. It is definitely a dish that I will cook again and again, especially during the winter months when using the oven is a must. Thanks for sharing!

Salsa Pasta Salad

This is the best pasta salad I've had in a long time. My partner and I almost ate the entire bowl without even chilling it. I look forward to making this a staple in my household. The only thing that I didn't use was the green chilies, but I substituted it with banana peppers for extra zing without being too spicy. Excellent recipe!

Marinated Tofu

For a second time experimenting with tofu and as a newly transitioned vegetarian, I would have to say that I'm impressed with this recipe. I found it quite tasty, but as another reviewer wrote, I will probably use a bit of meat rub next time and allow it to marinate a little longer than 3 hours. I would also try dicing the tofu instead of slicing it as it was kind of messy upon cooking. Altogether, this was a fabulously tasty dish and I can't wait to prepare it again. Thanks for sharing!

Microwave Popcorn

Oh my, was this popcorn yummy! I used the method that the recipe called for with vegetable oil, unpopped popcorn, but with no added salt. Afterwards, I added 2 tablespoons of melted, unsalted butter along with several sprinkles of white cheddar popcorn salt and I was good to go. This was an excellent alternative to stove-top popping, which never turned out quite right for me. Thanks for sharing this awesome recipe. The popcorn taste exceptionally great! :)
