Shredded Potato Quiche

Reviewed: Dec. 26, 2013
I liked this recipe- But I took some liberty with this one (Who can mess up quiche?) and I used a half package of Chorizo and cooked that up in a skillet with some white onion and added it to the potato before I added the ham and eggs. I topped with a 1/2 cup of Manchego cheese. It was a great Christmas morning breakfast for us. I gave it 4 stars and really enjoyed it - but I think I will have to be more discerning with my 5 stars for future reference. DH really liked it.

Banana Cake VI

Reviewed: Dec. 18, 2013
WOW! I had never even considered making a banana cake, but this recipe intrigued me. The reviews seemed too good to be true. This cake is fluffy and moist. I made this exact recipe (with the exception of making my own buttermilk with milk and vinegar) I used Gluten Free flour mix (Domata living flour) and it was delicious. Thank you for Cindy Carnes! It is really good.

Sam's Famous Carrot Cake

Reviewed: Oct. 30, 2011
This is THE BEST carrot cake!!! I will never use another recipe!!! Have made it twice now! I have a new favorite!! First time making it I followed the recipe exactly. Second time I used 1 cup white sugar and half cup brown. I think I liked the 2nd version better using the brown sugar. Beyond that simple change this is an amazing cake!!! I might try it next time with applesauce instead of oil.

EXCELLENT bread. I made 3 changes. I swapped applesauce for oil, used buttermilk instead of water and used 2 cups white sugar and 1 cup brown sugar. This flew right to the top of my Bread recipes!!!! I will be making more again today - Great texture and Amazing flavor. A must for any fall baking list!!!

Lemon Zucchini Drops

Reviewed: Sep. 20, 2010
Simply the BEST Cookie I have ever had! I did have to do some minor tweaking to the recipe - But that doesn't stop me from giving 5 stars! I used about 3 teaspoons of lemon zest and I added a 1/2 cup of white chocolate chips (because some one mentioned white chips in their review - my daughter believed we should add them!!) These were amazing! They had a cake/brownie consistency and our stayed together very nice. We did find that the 2 Tablespoons of lemon juice just wasnt enough to make a drizzle so we did 4 Tbls lemon juice and about 2 tsp of milk - the glaze makes these cookies - Thanks for an amazing cookie recipe!

AMAZING!!!! I didn't have high expectations when I made these...WOW was I wrong! I only made one slight modification and that was to add 4 teaspoons of cocoa powder. These are incredible cookies and I can't wait to make more! A new FAVORITE in our house.

Chile Rellenos

Reviewed: Sep. 5, 2010
Excellent recipe!!!!! I followed the recipe exactly and was soooo very happy to serve authentic Chile Rellenos! I served these with Macayo's Enchilada sauce (thickened slightly with some extra Monterey Jack cheese) and spanish rice and beans. Great Meal! Will definitely add these to the Recipe Box!

Chili Rellenos Casserole

Reviewed: Mar. 22, 2010
Sadly, this wasn't what I hoped it would be. I will say that it has the flavor of Chile Relleno I was looking for, however I have to agree with everyone else - the consistency was too strange. We ate ours and my husband loved it, but I was hoping for more of a crust consistency. I gave it 3 stars because my husband liked it enough to eat it.

I agree with everyone who's mentioned the dense bread made in a bread machine...NOT with this recipe!

Forever Fresh Cookies

Reviewed: Dec. 9, 2009
Great cookies! I found they are similar to the Neiman Marcus cookies I made in the past, except much easier. Mine had a shortbread consistency which was good with the crunch from the cereal and the oatmeal. I also substituted the corn flakes for crushed chex cereal, to use what I had on hand. I made a double batch of these!! Big Mistake! The single batch is plenty! Luckily I have neighbors who love when I drop off baked goods. These cookies are a great treat for neighbors at Christmastime.

Boston Baked Beans

Reviewed: Aug. 2, 2009
This was a fabulous side dish! We loved it! I did alter the recipe some and used canned Navy beans. I used some bacon grease and sautee'd the onions for about 5 minutes and added the rest of the ingredients, adding the beans and bacon last. I used water in place of the cooking water and it was still wonderful! Definitely a keeper! Definite 5 stars!

Beefy Cheesy Pasta

Reviewed: Mar. 5, 2009
This recipe is just like it says, Beefy, Cheesy Pasta. My husband I enjoyed this homemade version of Hamburger Helper. I did change the recipe a bit and added some sour cream and a little prepared mustard to it. My consistency before adding the sour cream was a bit too dry in my opinion. It was a nice change to our weeknight meal selections. It was fast, easy, tasty.
