Eggplant Parmesan II

Delicious! Made with home-grown white eggplants. Baked on cookie sheet with cheese, but not in sauce which kept them crisp and not soggy. Placed them on top of speghetti and sauce. Yum!

Mexican Bean Salad

The liquid/marinade quantity was fine (extra to keep it moist and flavorful). Better 2nd or 3rd day - so make ahead. Jicima adds a nice crunch and sweetness (my 3 yr old's favorite part of this salad).

Simple, quick and tasty - what more could you ask for? I didn't have/use the wine, I used 2 cups of beef broth instead of the consommé, and I put Ina few shakes of Worschestershire.

Addictive Sweet Potato Burritos

Fantastic! Combined this recipe w/ the Moosewood Restaurant version. Kept the sweet potato mixture separate from the black bean mixture (didn't blend together) and had no problems mashing the black beans in the skillet with a potato masher. Had more than enough filling for 10 pk of 8" tortillas - the extra filling AND the burritos freeze well.

Baked Spaghetti

Old Fashioned Coconut Cream Pie

followed other reviewers to use corn starch in place of flour. Also used pre-made graham cracker crust and canned, sweetened coconut. Took forever to thicken (not even certain if it boiled, but it did thicken), but tasted great!

Balsamic Roasted Pork Loin

Per other reviews, I lessoned the vinegar to 1/3 c and added 1/4 c honey. Smoked on charcoal grill for 30 min and finished in oven (350) for another 30-45 min. Delicious!

Sweet and Sour Chicken I

Halved the breading mixture for 2 chicken breasts. Seasoned chicken with salt, pepper, garlic & onion powders before breading. Made way too much sauce for us.

Chicken Florentine Casserole

Delicious use of leftover chicken and surprisingly not "cream soup"-like! Sautéed fresh spinach, mushrooms and garlic in a little butter and olive oil; laid in bottom of casserole dish. Made sauce in same sauté pan. Layered sauce over spinach mixture, then cut up chicken, and rest of sauce. Bacon and half of mozzarella cheese. 350 for 25 min covered; added rest of cheese, 10 min uncovered. Served over pasta.

Beets and Greens

Yummy! Made it with carrots (didn't have a lot of beets, so these were filler). Small beets took 30-40 minutes. Served with a splash of balsalmic vinegar - yum!
