Mango Salsa

This was really good! We used it on fish tacos (Tammy Hayden's recipe here is excellent) and even my kids loved it, though I divided and made some without the red pepper for them.

Pesto Turkey Burgers

We love this with a big slice of tomato and some homemade pesto mayo. Only change I make is to use grated parmesan instead of feta, but it's great either way.

Golden Pork Chops

This is a great idea, but I did as one user suggested and browned the chops first, then added the soup and just simmered in the pan. They stayed very tender and juicy.

Grilled Peaches

I've made this exactly as written and they were yummy. But I've also used pears, cooked them cut-side down in the balsamic for a few minutes (on the stove, when weather prohibited grilling), then served them filled with the cheese and walnuts and poured the balsamic on top. Delicious as well.

Salmon Rosemary Burgers

We loved these burgers! But I've made them twice, once with canned salmon and once with fresh. Please don't use canned. It just isn't nearly as good. I've also pan fried them in a little oil, which works fine as long as you chill them first.

Soy Ginger Salmon

This marinade is awesome! My kids won't eat salmon, so I used it on chicken instead (only change to marinade was using fresh minced garlic), and just dumped the chicken and the marinade into a deep frying pan and boiled it all with 8 oz fresh mushrooms as a side and the family devoured it. Will definitely try it with salmon on a kid-free night.

Scallops with White Wine Sauce II

The flavor of this sauce was really good, and probably would've been perfect had I just served it over scallops as was intended. However, I tried doubling the recipe and serving over pasta as well, as some suggested, and was not pleased. Too thin as a pasta sauce, I think, but great on scallops!

Mexican Baked Fish

This was really good and so easy! Even my kids ate it, and I usually can't get them to touch fish. First time I made it, the fish ended up a little wet from the juices that came out during cooking, so the second time I cooked it on a roasting pan (sprayed with cooking spray) so the juices could drain and it was perfect!

Italian Meatballs

Like others, I'm a little puzzled by the cooking time. Mine were starting to burn in 20 minutes. But overall a good basic recipe. I halved the recipe and added an egg and 2 tablespoons of prepared basil pesto (added moisture and flavor) and tinkered with the spice amounts a bit, but was pretty pleased.

Michelle's Blonde Chicken Chili

This was so good even my finicky kids loved it! I only altered it a teeny bit, substituting a can of Rotel chili seasoned tomatoes for one can of the green chilis, just because I was afraid 2 cans of chilis would be too much for the kids. And I added a can of sliced carrots, just because I sneak veggies into their food any way I can. Will definitely make this again!

Peanut Noodles

Even my kids love this "peanut butter spaghetti" and ask for more. The only change I make is to use crunchy peanut butter, like some others, because I loke the crunch. This is really good with chicken satay as a side, for people like my husband who have to have meat with every meal. The recipes have a lot of the same ingredients, so it's easy to combine shopping and preparation of the 2 dishes.

BLT Pasta Salad

Everyone loves this. I have been making it for any family get-together since summer, always doubling the recipe, and never have any left over. It is super easy, and the only change I make is to add some cooked frozen peas and use tri-color salad rotini to add color.
