Sour Cream Gooseberry Pie

Reviewed: May 27, 2010
Excellent. I had a quart of gooseberries and doubled the recipe and it worked out great. I added a little nutmeg to the sour cream and I liked the addition. Also, this pie really does need to be a double crust pie, because it is one UGLY pie without a top crust.

Crustless Cranberry Pie

Fantastic. Just fantastic. I used almonds instead of walnuts, because that's what I had. More like a cake than a pie, though. Would be good with any berry.

Chocolate Peanut Butter Cream Pie

Very good, and very easy. I used a chocolate crust and added some chopped up peanut butter cups to the filling. Went over great, everyone loved it.

Key Lime Pie VII

Reviewed: Dec. 1, 2009
Fantastic taste, and really easy. A word of warning though -- this is not a pretty pie. It comes out to be a sort of pale beige with green flecks from the lime zest. I added some green food coloring, which made it sort of greenish brown. If you're going to serve it to guests, I'd add a layer of cool whip to the top. Tastes FANTASTIC though.

Curried Butternut Squash and Pear Soup

Fantastic soup. I didn't have an onion to put in, but it didn't miss it. Perfect combination of sweet and savory. Will make again.

Peanut Butter and Jelly Cheesecake

Reviewed: Aug. 18, 2009
I make this all the time for potlucks and such, and it's always a big hit. I usually skip the jelly and dress it up with chocolate. Last time I used chopped up peanut butter cups and mini chocolate chips and chocolate syrup. It looked fantastic. I also like to substitute a chocolate crust. Be forewarned, the cheesecake takes 30-40 minutes longer to bake than called for, but doesn't crack at all.

Award Winning Soft Chocolate Chip Cookies

These were amazing. I love homemade chocolate chip cookies but don't like the slightly hard texture. These cookies stayed satisfyingly soft for days.

Made it exactly as called for with Rome Beauty's slightly past their prime. Was fantastic. Loved the crumb topping.

White Gelatin

Didn't have much flavor and was difficult to mix well, although it looked nice. Would be a good base for mix-ins like candied fruit peel or peppermint pieces.

Pear Pie III

Very good. I cut the sugar in half and used brown sugar instead, and I also added some nutmeg and cinnamon and craisins. Took much longer to bake than the recipe stated, I had to cover it with foil after about 40 minutes. Probably took 80 minutes total.

Sour Cream Raisin Pie V

Reviewed: Mar. 9, 2009
Very good, but definitely too much nutmeg. I cut the amount back to 1/2 tsp, and next time I would cut it back to 1/4 tsp. The brown sugar meringue was attractive and very tasty, much nicer than regular meringue.

Southwestern Chicken and Rice Casserole

Reviewed: Mar. 9, 2009
Really easy and really good. I added a can of black beans and a can of green chiles and sprinkled the chicken with chile powder so it had some color. I'll definitely be making this often. Would also be good with yellow rice.
