Soft Oatmeal Cookies

These are so delicious - I added 1 cup of raisins & 1/2 cup milk chocolate chips. Soft, chewy - exactly the kind of cookie you want your child to remember when she is all grown up!

French Toast Casserole

This was delicious. I did not modify this recipe. I used a 9 x 13 pan and the only thing that I would do different next time I make this would be to grease the pan a little more generously with butter. The casserole stuck to the bottom of the pan making it a bit messy for cleanup. Thanks for sharing!

Vegetable Fried Rice

I used basmati rice because I find brown rice quite heavy. So...I didn't use 3 cups of water. I followed the cooking instructions for the rice on the pkg. I also used frozen peas because I didn't want the peas to get mushy. I also added 2 stalks of finely chopped celery. I'll definitely make this one again!

Dave's Mocha Chicken

This was SOOOO good. I did not use chicken legs but chicken breasts. I pierced the chicken breasts with a fork to allow marinade to penetrate into the poultry. Wow! This recipe is a keeper. Careful tho' not to overcook the chicken - 30 minutes may be a bit too long - mine was done after 20 minutes...

Chunky Tomato Potato Soup

This is a good hearty soup, but I agree with another reviewer - it needs to simmer for at least 1 hour so the vegies can cook and for the flavours to blend together. I think it would be even better if served the next day. When I make it again, I'll make if for the next evening's meal.

Smoked Salmon Pesto Pasta

I had to modify this recipe to give it a 4 stars...I used an entire pkg of smoked salmon. 5 oz is just not enough. The sauce was very thick, so I needed to use 2/3 cup water and 1/2 cup white wine. The end result is a very bold taste. So, if you're looking for a recipe with delicate mild flavours, this is not the recipe for you. My husband and I both really love smoked salmon and pesto, so that's why it's a 4 stars!

Cinnamon Cookies II

I rate these at 4-1/2 stars! I used 2 tbsp cinnamon and 2 tbsp molasses and decreased the sugar to 1-1/4 cups. I ran a test batch through @ 11 minutes. 9-10 minutes works best. Nice and chewy if not overbaked! Thanks for sharing!

Pumpkin Cream Cheese Muffins

These are incredible - 100 times better than the Starbucks Pumpkin Cream Cheese Muffins!! I have to keep these under lock and key otherwise my husband would be jogging home every night except for twice a week!! :-) Bake these with confidence!

Bev's Orange Chicken

Certainly not what I expected, but pleasantly surprised. Now, knowing how salty these onion soup mixes are, I only used 1/2 envelope & that was plenty. I used 1 small clove of fresh garlic and I also peeled a mandarin orange and added it to the chicken about 10 minutes before removing it from the oven. Covered bake time for my chicken was 35-40 minutes! By the way...I used 2 boneless chicken breasts pierced the chicken breasts with a fork and marinated the chicken (in the fridge) in this unique mixture for about 1/2 hour before popping it in the oven.

Chicken Breasts with Lime Sauce

First time I made this, I fried the chicken in the olive oil. We found it too greasy. The next time I made this recipe, I followed the recipe completely except I baked the chicken in the oven for about 10 minutes @ 350. After the chicken was cooked, I melted the butter, but only 3 tbsp & squeezed the lime and then drizzled it over the cooked chicken breasts. As a final touch, I sprinkled the herbs on the chicken. Much better and not nearly as greasy. Very tasty and the lime flavour was wonderful.

Chocolate Chip Coffee Cake

Because chocolate chips are one of my daughters favourite "food" in the world, she loved this cake! The house smells great when this cake is baking. I set my oven to 350 and began checking cake @ about 30 minutes...

Curried Carrot Soup

Good combination of ingredients, soup was quite thick. I had to use extra vegetable broth. Next time I think I'll use low sodium chicken broth instead of water. I like the curry powder - a nice touch.

Cowboy Oatmeal Cookies

My daughter just loved these oatmeal cookies! I only used 3/4 cup butterscotch chip - plenty sweet with the brown sugar. We like chewy cookies in our kitchen, so I started checking them @ 8 minutes. Don't overbake them otherwise they will be crunchy!

Chicken Breasts with Balsamic Vinegar and Garlic

For garlic lovers, this is an ideal recipe. Next time I make this, I will use 3 cloves instead of 6. Garlic was somewhat overpowering. The balsamic vinegar & mushrooms were a lovely combination with the chicken!
