Warning!!** I am in no way, shape or form a writer and this blog is an attempt to journal my cooking and kitchen experiences.
I really enjoy to cook (but hate to clean up after) and I would love to work towards cooking healthier. I need to lose like 50lbs and exercise is not consistent in my life. I love going to the farmers market, but that too is a little inconvenient for me. I have a small veggie garden and I am getting used to using the vegetables out of there and doing some seasonal cooking. I planted it last year and learned a lot about gardening and seasonal cooking... I mean how many ways can you prepare a cucumber!? I will be expanding the garden this year and plan on documenting a little of that as well.
I also try and coupon as much as possible, so my weekly menu is often based off of what meat and produce is on sale. I live in central Florida where coupon rules seem to be different than everywhere else in the country... No extreme couponing shows for me! I also have just my husband and myself to worry about and only one fridge (and no microwave) this deters me from stockpiling items on sale and cooking like crazy for a month’s worth of food and freezing it. I don’t think that either of those things are a bad way to plan ahead and save money, I just don’t think they are for me.
Today’s topic - Lets pick some tried and true (and healthier) recipes!
Today I decided to start building a "go to" menu for healthier cooking recipes instead of having my weekly breakdown in the produce isle at my local Publix. All the recipes are from this site. I have tried each of these recipes and return to them again and again.

My alltime favorite! Salsa Chicken!!  :)

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze
Mushroom Pork Chops
As far as sides- I usually make a roasted veggie (broccoli and asparagus are my favorites) or some type of garden salad.
There are also a few mahi mahi dishes I prepare but dont have recipes for. I will add them as I make them in the future. :)
As I experiment with other healthier recipes, I intend to grow this list dramatically. I look forward to posting again soon.

I am also a freshman blogger. You did great! Believe it or not...getting out in your garden more often will help shed those pounds. I too am on a quest to lose 30 - 50 pounds. I have started walking after lunch, which I have started to bring more instead of going out for lunch or skipping if I have no money. I have lost 4 pounds in 2 weeks. With your homemade meals (no microwave) I bet all you need to do is add a little movement and you'll start to get rid of the weight you don't want. Nice post.

I also live in Florida and can't figure out how the extreme couponers do it. None of the stores here double coupons and most don't even take competitors coupons. So frustrating!

Good blog. I too am trying to lose weight and eat healthy. I work on a strict food budget as I want other things like vacations including visits to my parents in Florida. I am in NJ. I work all week and make dinner a couple of times a week. So Saturday morning I look for what is around my kitchen and start cooking. I almost always take lunch to work. This morning I already have healthy cabbage soup going using only half a head. I'll make tapoica pudding to get rid of the milk and healthy banana muffins. As I write this I notice two deserts which is most likley why I still trying to lose weight!
