Stuffed Butternut Squash

soooo good! used brown rice, almond milk and peas instead of brussel sprouts because I didn't have any - but am excited to try them next time - doubled the tamari/milk sauce and added some cumin and cayenne with the turmeric. delicious!

Curry Root Vegetable Pot Pie

We loved this recipe! It came out wonderful. I didn't skin red potatoes and the skin was actually quite delicious in the pot pie - i added some cayenne and used red onions, I added some seared chicken thighs and used 1% milk and only 1 tbsp butter (but extra oil from cooking the chicken). It was delicious!! (might add some green peas next time!)

Roasted Squash Soup

really delicious! I get a bin of local produce each week, and was able to pretty much use all the contents in this soup: carrots, sweet (and a few red) potatoes, onion, apples, squashes and roasted japalanos (left in the seeds for an extra kick) and roasted garlic - for those who don't think its thick enough, just dont add as much broth - will definitely make again!

Kai Kang Dang (Chicken Curry with Coconut Milk)

I was really excited about this meal with all the rave reviews, but my husband and i actually thought it was kind of bland - i had made a few changes though to make it healthier which might have reduced flavor. I used low fat coconut milk, 1.5 tbsp fish sauce (the sodium in one tbsp is outrageous!) and lots of curry paste (and some sziracha) - will try a different curry next time

Sweet and Sour Pork III

a truly perfect sweet and sour sauce! i didnt fry the pork, i just sauteed it...added sziracha to the sauce to make it a bit spicy, used colorful bell peppers, carrots and onions, served over white rice and added some shredded fresh basil over the top - delicious!

Vegan Black Bean Soup

delicious, quick and easy if you're not looking for too much effort because it uses mostly canned food - i used chicken broth, omitted celery and added cayenne pepper, shrimp and white rice - yummy.

Pumpkin Tacos

Soooo good! although i mostly only borrowed the idea of a pumpkin taco - added garam masala, cinnamon and maple syrup to pumpkin while it simmered in apple juice, added indian spiced chicken with lots of cayenne and sauteed collards with black eyed peas, all rolled up in a soft taco topped with tomatoes and avocado - just like my favorite burrito at Mamacitas in Asheville, NC!

Spicy Noodles - Malay Style

i didn't care for this meal - it was kind of bleh...i used sziracha instead of chili paste and it didnt have enough depth with the only other flavor being ketchup. the spinach gets lost with so many noodles so i added shrimp, orange pepper and pea pods instead of peas. the noodles were kind of soggy and stuck together too. and one package of noodles is way way too much for 4 people! my husband said I should actually give it 2 stars but i thought it tasted fine enough so i gave it 3....

Pumpkin Turkey Chili

absolutely delicious! I added a touch of orange juice to make it a bit sweeter, and cayenne pepper to add spice. my turkey had italian seasoning which was a really nice touch. I didn't think it needed sour cream or cheese even. Will definitely make again!

Red Lentil Curry

This was SOOOO good! I was really really sad when dinner was over :( and will definitely add to my roster of favorite recipes! I cut recipe in 1/2 to serve 2 people and have leftovers. Lentils cooked super fast (10 min?) so i added them at same time as tomatoes and it was fine - i added 2 tsp cayenne pepper to make it spicier, and used a whole can of diced tomatoes (recipe only calls for 1/2 can if you reduce serving size). I served it with tandoori chicken and basmati brown rice - yum!

Tandoori Chicken II

A touch salty (although i may have oversalted because i didn't measure), but otherwise had great flavor! I put it under broiler and it worked fine. I needs to be served with something because it's so dry. I served it with red lentil curry and it was delicious - but i like the idea of marinating in yogurt and lemon and will try that next time.
